So it's not the live chicken one would get typically - it is just fresh whole chicken from Woolies that is certified as free range, which means they are raised on farms that allow them to roam outside and they are not in cages most of their life.

Because this was such a large quantity and pot it couldn't fit into the oven so had to be dried on the gas stove for a little while and then added to a wonder bag (a very large one) and left to cook for a little while longer

Hello. I clean the Trotter's nicely... You got to cut out the hair on either side of the hoof. Give it a good wash. I boil them for about 20 minutes in the pressure cooker. When it's boiled, I transfer it into a pot. I then boil about a cup of sugarbeans in the cooker for about 10 minutes. To braise, you add to your pot... Oil, onions, your mixed masala Let it braise on medium heat, then add your boiled Trotter's only. Add your ginger and garlic, salt, curry leaves, 1 tomato. Give it a stir, add the boiled sugarbeans. Add the Trotter's water, depending on how much gravy you want. I cook it on high heat thereafter, since it won't take long to cook. Once it's thick and you have your desired gravy consistency, remove from stove and garnish with Dhania.

Usually we would work on about 3 people per kg of chicken - so for 30 people we would use closer to 10kg but we were specifically requested to cut the quantity of chicken down...
Hi there. Here is the the recipe that feeds 6-8 people th-cam.com/video/7vPwXY5PFLY/w-d-xo.html. The full recipe details are in the video description. For 50 people you can multiply all ingredients by about 6 times. So for instance if 2kg chicken feeds 8 people you will need about 10-12kg for 50 people. We estimate 5 pieces chicken per person but you can always adjust this lower because 5 pieces is quiet a meaty biryani so if your prefer more rice you will need less chicken. Or alternatively you can watch this recipe and scale up by about 1 and half times to get to a biryani that feeds 50. This recipe was enough for 35 people comfortably.

It’s looking absolutely yummy 😋 I’ve never made biryani this method. Always marinate my chicken and layer it raw on a layer of rice and lentils. It’s the moslem way and steam for an hour to perfection every single time. So I should perhaps try your method too. 🙏💕🙏
