I've made fudgey brownies by mixing canned pumpkin in with boxed brownie mix in the past. But it always makes so much. I love that this just makes a small batch, good for a couple of days. I definitely paused and went to write down the recipe because I can't wait to try this. Thank-you so much!

Really, she is a genius with food and I have learned to trust her with most things. Sure, she lived 45 minutes from me for years until she moved to the tropics and never once called me to hang out, but Am I bitter??? Absolutely!

Its about 95 here today (I live in a very humid river valley), and I don't have central air, so I am not going to bake the sweet potato, I'll cook it in the instant pot instead. Less oven time that way. My daughter requested black bean brownies for today, but I think I'll make both and have a side-by-side brownie taste test. 🐱 P.S. Here's a tip I learned from Jane Esselstyn, when lining a pan with parchment paper, wad the parchment paper up into a ball, then flatten and smooth it out. It makes the paper much easier to shape into the pan.
I love that tip for the parchment paper. I am going to do that next time. Let me know if you find a good black bean brownie recipe. All the ones I have tried taste too much like black beans.

Anyway we did our 2 brownie taste test, black bean (chef AJs recipe, which is the best I've found) vs this sweet potato recipe, and both were really good. My daughter preferred the black bean and said the swt potato tasted too much like swt potato. We only had plain orange swt potatoes, and it prob would've been much better with a Japanese potato. I thought it was also a little drier, but I suppose potatoes vary a lot depending on age and cooking method. I'll try them again sometime with Japanese swt potato and adjust plant milk as needed.

That tahini is super tough to mix up. I always have a hard time with it. Great video guys. I just made homemade hummus the other day too. Will have to add roasted red pepper to the next batch I make.
Yeah it can be hard to mix tahini in the jar, I find it easier to scoop it all out with a butter knife and/or firm skinny spatula into a bowl. Then use a good whisk to mix well, then pour back into the jar for storage.
I think that fact that it was probably made years before I opened it didn't help much. I did have to mix it with a knife for almost 15 minutes to get it smooth.
I have heard that for all the natural type nut butters, where the oils separate and float to the top, that you can invert the jar, leaving it upside down for 24 hours. Then empty the jar into a bowl and blend well, and then return the blended nut butter to the jar. It is supposed to remain blended. This has worked for me using Kirkland Natural PB. 🤎 the brownie recipe!
Great video! that was funny when Lex was wanting pretzels for the hummus and then when you guys tasted the hummus Lex chose the pita and you chose the pretzel to taste the hummus - lol. Enjoy seeing Lex in the kitchen cooking with you and Tim.
That green leaf plate is so cute! Where did you get that? I make a big batch of hummus each week and put a dollop on top of my steamed veggies for breakfast or mix in with my salad greens to give it a lil sumthen sumthen instead of salad dressing.
Ok, we got that at the 99c store years ago. They don't have good stuff like that anymore. That one is really sturdy. Now its all that really thin plastic stuff that doesn't hold up. I like the idea of the hummus on veggies instead of salad dressing for sure!

@@PlantBasedDads My 3 kids were homeschooled and loved to sleep late. I laughed that he was exhausted when getting up at 2:30. However, you might be surprised. All 3 are adults now and one gets up at 4:30 am to go to work every day. He never got up before noon. All 3 are very responsible but yes, they would sleep the day away. Funny how when it is in their best interests, what they will do so keep the hope.
OK this has got to be your funniest video!! Made these brownies today. My sweet potato was the regular orange type and pressure-cooked, so it was wetter than yours I think. I will use a white Japanese one next time. Also cheated and added 1/2 tsp instant espresso powder (I do for all things chocolate). Loved the taste! I also made PlantYou’s Bliss Burgers after watching your other video. Liked them. Made them thick-ish so had to bake for longer. I made the mix last night and left it in the fridge uncovered - that helped dry it out a bit. Keep inspiring!!! 👏🏼👏🏼👏🏼

Tahini doesn't have oil in it. Its made from seeds. There isn't anything to sub. I have tried leaving it out but it is tasteless. I often make this with just one spoon of Tahini and its good.

He is named after the character on Superman, but we added the extra X to make his name different. We had not realized there was a TV show with his same name until many years later when someone told us. I didn't realize that pretzel/pita thing and now a few people have pointed that out. Funny huh? We often influence each other a lot.
I'd have your son's thyroid checked. He's always saying he's so tired. There might be something to it. Sometimes, thyroid issues do make you tired to the point of weakness, another trait he is showing. Wish him luck going off to college. He's going to love the independence.
Actually he just had full bloodwork and he is good. The part you don't know about this is that he is up till 4am playing video games over the internet with other people. I let him do that during the summer.

A great trick I learned is to crumple the parchment up, then uncrumple it and it will easily conform to the shape of the dish nicely.

I'd have your son's thyroid checked. He's always saying he's so tired. There might be something to it. Sometimes, thyroid issues do make you tired to the point of weakness, another trait he is showing. Wish him luck going off to college. He's going to love the independence.
Actually he just had full bloodwork and he is good. The part you don't know about this is that he is up till 4am playing video games over the internet with other people. I let him do that during the summer.

Boomers were born between 1946 - 1964, so you're right on the cusp between Boomer and GenX. I was born in 1958, so I'm fully ensconced as a Boomer, although I hate being associated with them.

Per wikipedia, Boomers were born from 1946 through 1964 and Gen Xers 1965-1980, so Lexx is correct that you are a Boomer.

I hope you are enjoying your Summer Vacation.🌅⛱️🫑🙌💯 Also, I have tried to just use raw sunflower seeds, sesame seeds, or pumpkin seeds in my Hummus or White Bean Dip. I can skip the oil this way. It's actually really delicious. (Natural Grocers or Sprouts Bulk Section)

I stopped buying nut and seed butters too because I saw the recipe in the Vitamix cookbook. It is just seeds or nuts and salt, maybe a little water.
