I can hardly wait to test for 2019 results. 2) If I were to make this and I do mean "IF", instead of a general seafood broth I would make a stock with toasted shrimp shells. 3) When you were communicating with the seafood, I could of sworn one of the clams said "moo."

The pots are very nice but it's unlikely you'll ever find them in a professional kitchen. I read an article a few years back in the NY Times. The reporter was interviewing a professional chef and asked him what pots and pans he used. The chef took the reporter to a kitchen supply store and for the price of one fancy enameled cast iron pot (which are usually supplied to TV chefs by the manufacturer) he was able to buy all the pots and pans he would need in his restaurant.

Works in 2019 as well. Excellent dish and fabulous chef.

I remember this guy from Top Chef way back. He was a standout and enjoyed seeing him quite a bit. Had no idea he had a TH-cam channel. Nice dish!
