So, how does this work? First you eat the pasta and then you grab a cockle and pierce the "meat" with a fork and eat that after? I never understood the idea of leaving the shells in the dish.

In Malaysia we have different kind of cockle. The flesh is reddish and it is called blood cockle. Usually I boil them with some salt and turmeric leaves.
Clams are _so_ so tasty. I prize their sweet, taste (creamy mix between a prawn and rich crab) far above that of the over-poshed scallops, oysters and langoustines. Only issue is I really don't like the shells in my dish so I have to spend about 5-10 minutes de-shelling the nice meat out every time lol.
omg! cockles are one of my favorite clams! I thought I could find them only in Korea, cuz they are popular in Korea. but good to know! Thank you always for great videos!

step one: open shell. step 2: take out nasty meat. step 3: swallow shell whole.
I think they leave the shells in the dish to give it that rustic fresh look!
