I've typically washed them down (dawn and power washer) for oils & metal shavings. While heat hits 250ish then begin to oil (Mazzola or grapeseed oil). Raise to about 400. I have a Meadowcreek TS120, a few issues, gaskets, mounted thermometer never trusty, knowing hotspots, but otherwise Love it. After owning several cheapies (under $500) and scraping every couple of years - rust....etc.

Good info! I was curious about whether an initial factory burn maybe not super Smokey was the best move.

@@Nahbruhsheesh This guy is closer to being correct when mentioning grapeseed oil, but the optimum oil for seasoning cast iron is Flaxseed oil. For seasoning purposes it provides the hardest coating and will protect the best. He's also correct in saying heat the cooker to 250° before coating with a seasoning, then raise the temp to 400°. Coating the stainless steel trays is almost a waste of time. If you are going to coat them, take them out and wipe them down with flaxseed oil using a lint free cloth. Using Canola oil and only heating to 300° will just make the inside of the smoker very sticky.

Do you season it immediately after washing the inside, or do you let it dry out first?

Hey Jeremy, I don't know if you're providing answers to this video, 5 years after you posted it but I'm hopeful you'll answer my 1 simple question..........I purchased an Old Country Wrangler that, sadly, was damaged during it's trip up here to Pennsylvania. Academy was great. They took it back after I sent them pictures of the damaged Wrangler. After this unfortunate event, I decided to pick up a chargriller xd grand champion. The smoker has similar specs as the Old Country Pecos and with my Veteran discount I couldn't pass it up. But my question is this:
I need to season it. I understand the canola oil application process but I need your advice regarding a "Fuel Source" during the seasoning process. Should I use strictly wood or lump charcoal or a combination of both together? Lastly, is one seasoning enough before my first smoke?
    Thanks Jeremy!
