For Verizon you can do it in the app too! For customers not using it, it will often show up on the Home Screen as a tile and you can toggle it on for each number or you can go to Account -> Edit Profile & Settings -> Number Lock and enable it there
Here in New Zealand this feature is automatically added for eSIM and you can only transfer an eSIM to a new device by going to a providers store and asking them to do it for you

This is helpful. However, don’t feel too safe still. The bad guys have ways to get your calls and texts forwarded to another number without doing a full sim swap. Plus, they can also sim swap within the same carrier and account with the assistance of rogue/paid off carrier employees and social engineering.
eSIMs aren't going to prevent this looooooooooooooool, SIM swap scams work on esims as well. Service on an esim can still be transferred out to another phone. Scammer just has to call your provider, say they lost their phone and give a sad sob story till your carrier agrees to transfer the service from your eSIM to another sim for the scammer lol

That's precisely the vulnerability problem - someone in a store being able to do it. You don't want that. Low paid employees are too easily bribed.
