Welcome! If the grafted Gymnocalycium is still healthy, you should trim the 'arm' off so it doesn't divert energy from the graft. You can propagate it if you'd like :)
My little graft fell off but the dragon fruit cactus went crazy multiple times over. (No fruit though) I've gifted many of the off shoots. Do you happen to know what kind of dragon fruit they would produce?
Mine is growing really long arial roots (I didn't know what they were before this and was worried so thank you so much) the longest is like 6 inches. The top has been dull for a couple months now, there's new growth that's a lot smaller than yours but pretty thick. Should I give it something to climb? Is there a chance of it growing fruit? Should I cut off the top?

Thanks for the question! If the grafted Gymnocalycium looks unhealthy, you can cut it off and plant the rest Hylocereus with the arm attached. If you just want to propagate the arm, you can just twist or snip it off at the base and propagate like any other succulent cutting. I still haven't done either 😅

Pretty sure it's the white flesh variety!

You can give it something to climb and cut off the old graft for sure. I'm pretty sure these need to be cross pollinated to flower/fruit.

They don't get very big after grafting

I would not sacrifice a moon cactus for dragon fruit .
