Don't know the background of your plants because you haven't mentioned it, but generally, the roots should be completely submerged in water. That way, the roots will remain fresh and healthy. Exposed roots will lose moisture causing wilting, which will result in bamboo leaves turning yellow.
I have had at least 3 of these over the years and my issue is the large stem will turn yellow and die, when I cut into it its hollow and dry so I cut higher up on the stem and it was solid all thru so I put that in fresh water with only one frop of fertilizer. will it live?

That doesn't sound good. Did you use rocks/pebbles too? The yellowing of bamboo stems can be hard to reverse. One way to revive your 3x bamboo stems would be to grow them is soil. That's usually the last option when nothing else seems to have worked. Meanwhile, replace the water, move your bamboo to a shadier spot away from direct sunlight and see what happens.

Too much water can be the cause of the yellowing lucky bamboo. Also, check the placement. Make sure it is not in direct sun light.
Sometimes when it’s in soil the plant can start getting root rot which can cause things like this, specially if the pot does not have proper drainage
