  • Tamatama is a native Papua New Guinea food preparation that mainly Autonomous Region of Bougainville People make.
    It is mashed cassava and coconut cream.
    The mashed cassava is also a native food in some parts of the Africa that they call fufu.
    I am not really sure if I am following the right process but this is my second attempt and I think it looks awesome and taste great also.

    Tamatama is the methodology used behind the preparation and not restricted to TAPIOCA. Tamatama is the name all have come to know it and originates from the Autonomous Region Of Bougainville and Taro was used for this method of cooking. You did well and I'm assuming it's your first attempt at it and you will see where you need to refine your preparations like cleaning out the tapioca fibres before beating it with a "Pestle and Mortar". Use just oil instead of water oil mix when cleaning out while beating.....so your starch doesn't absorb any more water and don't boil the rolled out tapioca again in coconut milk or it will absorb more fluids and spoil the texture you should expect from Tamatama.....just simmer your coconut milk down until it starts too thicken and pour over your tapioca rolls. But the key in preparing good tamatama is behind the beating.....it's a long, tedious, sweat breaking but very important part of the process that greatly affects the outcome of your tamatama so do it patiently and you will be rewarded.
    PS....I sometimes infuse the coconut milk during the boiling process with lemon grass for some added flavor. 🤫
