If black takes the knight immediately then white takes black's queen. If black exchanges queens, white can recapture with knight, pulling him out of the line of fire.
I mean, promoting the black pawn to a queen will stop the white rook from checking the black king... this will stop the mating pattern that you've shown.

21. h4 is insanely deep tactically. It prepares Nc5 without getting hit by Nxa5 b6 tactics. The lines are insane. Ding is a beast of a calculator.
