    [Cocoa rolled cake dough] (28x28cm Baking pan)
    A - Egg yolk:70g
    A - Granulated sugar:35g
    B - Egg white:80g
    B - Granulated suga:40g
    C - Cake flour:35g
    C - Cocoa powder:10g
    Unsalted butter:10g
    [How to make]
    1.Set A to room temperature,Whisk until done with a hand mixer.
    2.Make B a harder meringue in another bowl.
    3. Put half of the meringue into 1 to make the hardness uniform.
    4.Add sifted C to 3 little by little and mix.
    5.Add the rest of the meringue and mix thoroughly.
    6.Heat butter to about 50°C to melt it, put it in the dough, and scoop it from the bottom.
    7.Preheat oven to 180℃ and bake for 15 minutes.
    8.Once baked, drop it from a high place, Peel off the paper and cools it down.
    9.When it cools down,Cover with wrap
    10.Cover the dough with a baking paper.Turn the inside out and peel off the bottom.
    11.Apply cream to the dough , Make the winding end a little thinner.
