- A necessary trip to the airport in Rome meant that we took a slow journey back home, partly along the coast.
We visited the Hotel Punta Rossa near the lovely town of San Felice Circeo and afterwards rejoined the motorway at Frosinone.

We had lunch at Laurito Beach (opens usually mid May)
Carlos' Caporalessa recipe:
For 2 people (double for 4)
200g bucatini or spaghetti
400g tin of tomatoes
handful of olives
handful of capers
2 cloves of garlic
1 eggplant
diced mozzarella
parmeggiano reggiano /breadcrumbs
Dice the eggplant and soak in salted water for 20 minutes, squeeze water out and fry in vegetable oil until golden. Set aside.
Turn the oven on to 180c
Maker the sauce: squash the garlic, toss into pan with olive oil. Add the tinned tomatoes, chopped olives and capers. Cook for about 20 minutes until the sauce has thickened up (reducing the water form the tomatoes).
Put the pasta onto cook. If it says 10 minutes on the pack cook it for 7. If if says 12 cook it for 9.
Add the eggplant to the sauce.
Add the pasta and the mozzarella and mix it together.
Pour into an oven proof dish. Grate parmesan on top and sprinkle a couple of spoonfuls of breadcrumbs, then pop in the oven for 10-15 minutes.

I absolutely adore your videos. My adult daughters and I were in Italy 2 years ago. I hitchhiked solo through Italy in 1973, and cruised with hubby in 2015. Have to return but at 70 and covid not sure. I doubt I will be scrambling up and down all those steps! Thank you for all the hard work you do to delight all of us❤️.

I just love watching your videos, I’m British but live in the US and your videos bring back so many beautiful memories of a time years ago when I lived in Italy for 6 months! I can still remember the beautiful feeling of eating pasta or focaccia and fresh fruit down on the beaches with the warm sun on my face listening to the waves. My daughters and I went to Rome for two of our birthdays a few years ago and happened upon a completely deserted beach on my birthday - in December. It was a fabulous day, made all the sweeter by finding a message made out of tiny stones, on the sand, that read "Carlo loves Juliana" and two linked hearts. Such a lovely memory of a fabulous holiday... My girls are very precious to me, even now they are both adults, so I know how it feels to send Skye off to school....

Hi Nicki and Carlo, I really enjoy seeing a glimpse into life there! I’m very impressed and amazed with the terraced gardens there on the mountainside. It would be so interesting to hear the story about how the gardens are created and how old the steps are. Carlo’s parents’ gardens are also very impressive. It would be interesting to see and hear about theirs as well, if that’s something you’d ever want to share. Every time I see these garden areas, I always think, “how in the world did they get those there?” Very impressive, and I’m sure lots of very hard work! Hi Nicki, Carlos and sweet little Holly. Italy is gorgeous. The plant Carlos picked up is called pink ice plant. It is all over California and I grew up with it everywhere. My Father said it is quite an invasive plant and yanked all he could out of the yard. It is a good helpful fire retardant plant. During the years that he would yank them up California didn't have all the fires that are common now. Your vlog reminded me how beautiful a plant it is. I was told Italy and California are quite similar. I can see that in your lovely vlogs. Temperatures get a bit cooler along the coast in the winter months but nothing too drastic like freezing or snow. How are your winters there? I enjoy your beautiful vlogs. You both have quite the stamina for all of those steps, glad you take us along and show us your out and abouts.

When Carlo picked that plant off the beach, he reminded me so much of my mother. She picked plants to bring home from the middle of nowhere when she gets her fancy on them 😂
My parents do that as well. I'm always looking around for the police or someone to stop us or worse! They do this everywhere, even in parks where oftentimes it's illegal. We have evidence even in vacation pictures. Its funny but they give me such anxiety!
@@donneone I honestly have to hold myself back from grabbing bit off of succulents that I want! In my mind I’m always scheming how I can return in the dark and “harvest” everything I want!! 😆😁 ( I never do- but I think about it!!)
My aunt did that too. She always said, let’s get a slip to take home. I still have many of her house plants after she passed in 2019 at age 93.

The plant is from Southern Africa. We call it ‘Vygie’.
It also grows on the beaches in California.
California's coast and parts of south africa have the same climate as Italy and also parts of Australia,in the deep south of Italy for example eucalyptus trees are everywhere,they were imported from Australia in the early 20th century to eradicate malaria which was endemic in the south of Italy.
Hi, I reckon they might be what we call ‘pig face’ plant in Australia. I know, an ugly name for a very cheerful pretty flower! If I’m right, it’s edible. Can be pickled. Check first, of course. Hope it takes root for you- it likes neglect! 🌸

This video was a real treat to myself while eating breakfast getting ready for a busy Sunday of projects that need to be done around the house. Nicki we absolutely LOVE your videos!!! You are so talented. I’m so sad that “I’m all caught up” with the videos. We’ve been watching two or three a night for a couple months now. We love everything about them. Carlo, Skye, Tomas, Luca, Holi, Elizabeth and the girls, Skye’s boyfriend and all the beautiful scenery. The tomato canning episode inspired me to grow tomatoes this year! Would love to see more of the garden and any tomato tips!
