    [Ingredients] 25 cookies
    ◎Cookie Dough
    60g unsalted butter, room temp
    50g granulated sugar
    1/2 egg
    160g all-purpose flour
    40g almond flour
    ◎Royal Icing
    1 egg white
    200g powdered sugar
    food coloring(red, yellow, green, blue)
    [Instructions]
    ◎Cookies
    1. In a bowl, whisk room temperature butter until smooth, add granulated sugar, and mix well until it becomes whitish.
    2. Add the beaten egg in 3 portions and mix well each time.
    3. Shift together cake flour and almond flour into the bowl and mix. Wrap it in plastic wrap.
    4. Cool the dough in the fridge for 1 hour.
    5. Knead the dough lightly and roll it out to a thickness of 3 mm with a rolling pin. Cut out the dough with cookie cutters sprinkled with cake flour.
    6. Bake in the oven preheated to 170℃/340℉ for 15 minutes.
    ◎Royal Icing: Make two types of icing, hard for outline and soft for filling.
    1. Put egg whites in a bowl and loosen lightly. Add powdered sugar and mix well until creamy and glossy. Cover the bowl with plastic wrap to prevent it from drying out.
    2. For outline: Put 2 spoons of icing in a piping bag.
    3. For filling: Take 2 spoons of icing on a small plate and add water little by little to soften. Put it in a piping bag.
    4. Color icing: Take 2 spoons of icing on a small plate and mix with food coloring. Make two types, hard and soft.
    ◎Decoration
    1. Outline: Cut off 1 mm of the tip of the piping bag with scissors and frame the cookie with hard icing.
    2. Filling: When the outline icing dries, apply a soft icing inside.
    3. Drying: Dry for half a day to overnight until the filled base is completely dry.
    4. Decoration: Decorate with hard icing. Dry from half a day to overnight.
    ※Handling of piping bags in use
    Cover the tip of the piping bag with a wet paper towel to prevent it from drying out.
    If it dries, the tip of the piping bag will harden and you will not be able to pipe it out.
