When burning logs do you always just close the bottom vent and keep the top one open?

On my particular stove, yes.
If you also have a top and bottom vent I would also suggest the bottom vent is closed once the stove is up to temperature and you regulate the stove with the top vent.
If the bottom vent stays open you allow to much air into the stove which means you burn through your fuel faster than you need to. My stove is a Stovax Stockton 5 for reference. Hope that helps.

Depending on your stove yes you can add coal but I would use coal to start with rather than adding it on top of an already burning wood fire could get messy.

You should leave a bed of ash when lighting a fire for best results, you don't want the stove to be completely cleaned out!
