    I fish the Gulf of Mexico out of Louisiana and been cleaning fish for a long time but your videos have definitely taught me new tricks to get a better result.
    I love a clean smooth fillet. Thanks. I would love to see a video with you cleaning fish at your normal speed for work.

    I don’t know if you e done a video on how to properly take care of any fish especially yellow and bluefin tuna, blood draining, icing etc, I would hate to ruin a great fish not handling properly after caught? You are the man!

    An experiment I did once that actually turned out great... took the bloodline out of the filet (it was a yellowfin for the record). Trimmed it up and cut in half. Buried to two chunks in salt for 24 hours, rinsed and changed the salt once after the first 2 hours. Next day I rinsed the bloodline, soaked in soy sauce for 10 mins, rinsed and dried, and wrapped in cheescloth. I hung the fish to dry just in the walk in for a couple weeks. When it was rock solid, I would grate it with a microplane over pastas and soups right before serving. It made beautiful paper thin curly shavings, like katsuboshi. Honestly, incredibly delicious. Great, mellow fish flavor screaming with umami. Lasted forever since youre only shaving a a teaspoon off at a time really. I'd really suggest it, could be good as a value added product for restaurants, no idea what you could charge for it though! Thanks for another great video

    I was wondering.
    You said that saltwater fish should be washed with salt water, and freshwater with fresh.
    But what about fish that can live in both salt and freshwater like salmon?

    On a bigger bluefin it's better to split the pelvic fins and leave them on the belly loin, you keep more of the fatty belly intact when you do the final trim and breakdown before you use it for sushi.

      Sure, boils down to if you want to cook the Kama toro bone in or out 🤙

      @reed_thefishmonger With the 150lb+ you can bone out the kama toro and serve the cuts as sashimi. We grill the pelvic fin "drumsticks" and give them as "service" to big spenders.

    It's not uncommon to see the bloodline marinated & deep fried while it's fresh in Japan, or grilled over charcoal. Usually first brined in a mixture of garlic, ginger, water(or stock), light soy, and sugar or mirin(japanese sweet cooking wine), then coated in starch and fried, or grilled while repeatedly dipping it into the marinade to create a smoky glaze.
