As soon as you mentioned improving the coffee and knowing a guy all suspenseful I thought it's going to be Hoffmann isn't it... And it was! And I love it! As fan of both channels, I'm very much look forwards to this collaboration :D
Evidence that blaming equipment is an excuse. You work within and compensate for the limitations of your equipment. That said, I miss the control and capacity of a professional deep fryer.
@@tiacho2893 Growing up one of my fathers co-workers was married to one of the top chefs in the city. Every once in a while we would have them over and he would take whatever my mom was attempting to cook and step it up to something great with what looked like no effort at all.
James Hoffmann, yeah who else would it be. He's "the" coffee expert for the job. I actually squeed when Alex called him. I love James' TH-cam channel. An award winning barista himself, James teaches different techniques in coffee preparation, how to choose the right beans and ingredients, testing different coffee-making gadgets, and he has done a lot of crazy and funny things involving coffee. He's done some baking and cooking with coffee too. I'm so excited to see how he could help with Alex's coffee dilemma.
I literally let out a surprising exclamation of satisfaction in knowing that there is going to be an awesome collaboration with the illustrious James Hoffmann!!
He hinted in the comments of the 1rst crème brûlée video that this series is about "Paris' best" If that's correct there will probably be more sweets (I'm hoping for mille-feuilles) but possibly also savoury treats you can find in bakeries (Paris' best quiche? fougasse? jambon-beurre?)
Haha I love how the cream brûlée was so easy for you to master and only took like two episodes. Then the dry pasta series was like a million episodes of trying to dry that damn pasta. Love your videos!
The smile on Seb's face and that slightly manic look in his eye when Alex bit into the eclair is the face of a true artist watching someone try his creation. He's a person who gets it watching someone else who gets it.
James Hoffman and Alex? I literally did a clap of excitement when I heard "James" at the end :D Can't wait, it's gonna be the food nerd clash of the year!
considering the madness that James has done to extract every mg of goodness and flavour from coffee (and other things to put into coffee), this gonna be good
What I liked most about this was that it was a professional pastry chef cooking with equipment that I can get or already have at home... it makes it feel somehow more accessible, like maybe if I practice more, I can bake e'clair like Utopie. Also, make sure that James brings his Bripe.
Yaaaay, is this the first guest of Le Studio? I remember when Alex said that Le Studio would be a place where he and his guests will be able to cook together. So, I guess, at last Le Studio starts to work as it should:)
When they ground the coffee in the mortar, my first thought was of James Hoffman saying, "Some of it will be over-extracted, some will be under-extracted."
I think part of what makes these dishes memorable is the research for the most authentic way to make them. Experiencing the recipe that made people fall in love with a flavor and the technique involved is part of savoring them.
Chef’s smile at 10:12 is the ultimate feeling: when you give someone the food you made, and you know it’s delicious and the other person knows it too now
Tout au long des infusions de café, je pensais au recettes que Hoffman fait parfois. Et à la fin, Boom!!!! Quel punch!! Je suis un fan de vos deux channels. Bien hâte de voir la suite! Merci Alex!!!! Ça fait ma journée!
Wow. Alex this Video is another Masterpiece! The Camerawork, Editing and Storytelling are absolutely awesome. In my mind I could smell and taste everything I saw. And I guess we reached a new stage, with the master chef teaching you and us in your legendary studio-kitchen.
Everytime you make a video I get a lil excited it's rare these days when someone wants to make perfection and some say you can't make something perfect maybe not but your always close lol amazing brother thanks for the vids much love
I love the B roll shots of you walking into Utopie! felt very Willy Wonka or Harry Potter-esque, so magical and whimsical. great edits as usual. can't wait for part 2!
What a video. I loved that the chef was in your studio. That improved the quality so much even though I missed the B roll of the artisinal kitchen the focus on the job at hand was really nice. And the litte teaser to who I think will be James Hoffmann. WOW! All those years I've watched your videos and you never stopped improving and improving. Keep it up!
James Hoffman, the internets man of coffee, known for turning deserts into coffee. Now its just up to you to help him turn his coffee into a desert. Cant wait for the next one.
The moment you were talking about the coffee flavour being better I thought, imagine if James Hoffmann could be involved here, but they don't know each other, it'd never happen. They're two of my favourite, yet completely unrelated channels why would they ---OH MY GOD HE'S CALLING HIM! What a crossover!
Even before I finish the video I know this is gonna be a great one. I am OBSESSED with eclairs, they're my favorite pastry since childhood. And now that i live in France, my preferred choice is also mostly coffee eclair for a couple of reasons. First, in my country (Turkey) we classically only have chocolate glazed eclairs with 2 types of filling: vanilla custard and chocolate custard. And I usually prefer vanilla custard+chocolate glaze mix cause it feels so much lighter. But these aren't available in France, so sometimes chocolate over chocolate is a bit too much !! Thus i go for my next favorite flavor, coffee! Always goes great with the choux and not as overwhelming, yum 😋
Even in Germany i have heared of UTOPIE Bakery. They are outrageously good! I was in Paris for a Buisiness Trip just a few months ago and every day i went there and ate my way through their offered Food and everything was excellent. My Business Partner recommended me this Bakery while i was preparing for the trip. If anyone reading this is in Paris or plans to go there make going to this Bakery a big priority :D
The shots of the pastries in the cases made me want at least one of every single one of them. While making the coffee eclair, I could just about smell the grand coffee flavor. Great video.
What an awesome cliffhanger! Can't wait to see my two most loved food experts in one video!! 😍 And of cause great video! They always make me so excited to learn and experiment more with food :)
First thought that came to mind was to do a slow brew with the coffee on medium-low heat so you extract as much of the flavour you can without boiling it off, in as little water as you can manage; basically, concentrate it down. Or maybe do a regular strong brewing and then use your desiccator to drive off the moisture and concentrate the coffee flavours that way. Interested to see what James will suggest!
Who is Alex? To the blind, he is the light. To the hungry, he is the bread. To the sick, he is the cure. To the lonely, he is the company. To the sad, he is the joy. To the prisoner, he is the freedom. To the poor, he is the treasure. For me, he is everything.

The second you mentioned you used fresh coffee beans i wondered what effect different beans might have on the final product and was about to go to a James Hoffman video to suggest it there but i guess i won't need to now. I'm excited

I hope Hames Joffmann shows up too
That's a fusion I wasn't expecting but would really appreciate. Fantastic news.

Great foreshadowing - cant wait to see the collab!
The crossover we didn't know that we needed. Really excited for the next episode.
oh yeah ... james hoffmann ? yeah totally not expected but im excited for the next epicsode without doubt
very hype
Yeah, but will The Hoff being able to help. I mean, I didn't know David Hasselhoff was a coffee expert.
When you mentioned you knew someone who knew coffee I went like "I swear if it's James" and lo and behold it was him! Can't wait for the next episode!
IKRRRRR SAME HERE!
Exact same reaction here as well! 😂
Glorious James Hoffmann ☕

Hey Alex...are you making a series on French sweet treats? That would be the most insanely amazing series ever
I'd love if he would weigh himself at the start of the series and after xD
And, crucially, the extraction of flavour compounds from beans 🤤
That would be a lifetime job, I am afraid ...
just sweet treats from his perspective

"Creme brulette"?! What is that, a tiny créme brûlée? You like sweets, but dislike words? French is weird?..
Hmm, would it be possible to make a creme brulee eclair? Vanilla custard filling and a torched caramel crust instead of a glaze.
Brulée
@@HidingAllTheWay It would be possible and it's one of the best ideas i've heard all day. I solemnly swear that I will ask my pastry shop to make it.
