So glad I stumbled across your channel. I enjoy Japanese food. REAL Japanese food, not an American version of it. Thank you for sharing your recipes and I look forward to watching more of your videos. Keep up the great work.

Thanks Paul for showing the Clear Soup cook. This always tastes SO good!
Could you explain the standard dipping sauces, what foods to use them with, and how to make them?

Hello ... I just bought a 36" Blackstone griddle and I've been watching as many videos as I can. I stumbled across your channel and feel in love with it. I've almost binge watched them all.
The reason I like your videos so much is you have a talent for explaining in a few minutes what you spent your entire career learning. You also include the prep portion of the meal. Thanks!
I have a question. I saw on another channel that you can't cut meats/vegetables on a consumer grade griddle. That can only be done on a commercial grade flat top. Your thoughts ...
Thanks again for sharing with us.

Thank you. I’ve been asked this many times about using the knife on the griddle. Can you point me to video where they say this? I would like to know why as well. From my experience it doesn’t do any harm to the griddle top. No more harm than scrapping and scrubbing the griddle.

I used 4 cups of water and simmered for 1 hour and barely had enough soup for 1 person. I keep it at a steady simmer. If I would have cook for 2-4 hours it would have dried up. Can you give me some more advice Paul

Thanks Paul! This is one of the best channels out there! I love to cook. I’ve been watching cooking channels for years, nobody but you explained how to make some of my favorite food. Around me I have Osaka, and Ichiban Japanese steakhouses. But they cost a fortune for a small lunch/dinner. I’ve had a Blackstone for about 5-6 yrs. They need you to be their master in this field! I will be making making many of your recipes! Can’t wait for more videos!

All the hibachi restaurants I have been to do not use carrots and they are authentic by the way 4-star to 5-star
