Can’t believe you went to every place I do whenever I’m in Vancity, yep if your on budget these places. One place I’d add is the Terra Breads @Olympic Village, like Brekka they have multiple locations, what makes this place special is the view, no matter the time of year.
Lots of spots I'd say you missed, but some require a time machine, like Dunn's Famous on Seymour. One you did include a screen shot of but appeared to miss out on was the Japadog Food Truck - so amazing. Also, just outside of the downtown core is La Casa Gelato at Glen & Venables - if you want ice cream, they have a ridiculous amount of options.
purebread is average... their displays is what made them popular... go to Taiwan and you'll see how stunning their sweet and savoury goods are at any bakery - world class
Breka is affordable since everything is pre-made or is made with instant mixes. The ‘fried egg’ in the breakfast sandwiches come in a large bag frozen. I don’t get why it’s popular, but people seem to love it.
Siegal's Bagels has two great locations in Vancouver. The Montreal Smoked Meat Sandwiches are amazing on the wood fire oven made bagels.

Breka...I love a local bakery; mine in TO is Le Gourmand. There was a fabulous porchetta place in FCP...yum.
