Just made the soup and followed all direction! It's a very light and 'gentle' soup. A nice 'recovery' soup I would think. I would use it as a side vs. as a main meal. my first time trying this vegetable. decided to make the soup first since i haven’t had soup in over 6mths, was easy to make and delicious AFTER more spices were added, without more, the liquid was too bland tasting. i added more salt & pepper. then added 1/2 tsp of goya sazon and when that didn’t help enough either, i added 1/2 tsp of grey poupon and that did the trick.. Got 2 - 10ish ounce servings out of this (using 12oz of bok choy) and at 3 netcarbs max each, this makes for a great Keto friendly soup and the turmeric in it is excellent for those of us on Keto for inflammation reasons. thanks for recipe, now i know i will always have a tasty keto friendly soup available if i get sick :)

Stir. Don't wait too long, turn off the heat while the bok choy is still crunchy. There you have a full dish of delicious veggies, all you need is some rice to pair with.

I came here looking to see what to do with the bok choy I bought on sale and as usual you were a big help:) I have never worked with it before but have always enjoyed its mild goodness whenever having Asian cuisine. I have a very picky palate when it comes to veggies and so this is a real winner for me. I’m going to make the salad tonight. I bought the mature bok choy so hoping it will be good. My husband loves cashews, so I’m goin to put some chopped cashews in our salad. Going to pair it with some grilled chicken thighs for dinner. I tried this today. It was absolutely delicious! I am not a big veggie person, but this was so fast and easy to make. Lots of flavor. I personally added chicken broth instead of water. Added salt and pepper in my own bowl Thank you for sharing this recipe!

I always try to grow something different every year in my garden. One of the items I grew was baby bok choy. Lots of it! Will probably try the stir fry, but will add chicken. Some will go in the freezer for the soup. I hate to waste food so your recipes will get me started. Thank you!

Virtually all fruits and vegetables are perfectly safe and delicious when eaten raw. Though kidney beans must be cooked at a high temperature for at least 10 minutes because they contain a toxin (phytohemagglutinin), which is why they should be boiled first if you want to cook them in a slow-cooker because they don't get hot enough to destroy the toxin.
I'll make the stir fry today to serve with fresh Alaskan halibut poached in coconut milk. Later this week, I'll try the soup. As is perhaps obvious, I've got a good harvest of Bok Choi in my garden this spring.

You can just use all olive oil - you will lose that nutty flavor but it will still be good!
