What a delicious looking salad, thanks for sharing. But wanted to mention that when cooking the quinoa, you should rinse the uncooked grains a couple of times so it doesn’t have that soapy or bitter flavour. Also, spend a few minutes massaging the kale and it is much nicer to eat. I am sure long term vegans know this but for those just starting their journey, it helps to mention it. As delicious as the salad looks and sounds though I would need to add some herbage to it, fresh mint, parsley, or even basil. I think I must be one of the few folks who has never put fruit in my salad, I eat it as dessert instead. I always worry about the dressing classing with the fruit and making it taste weird. But I will give it a go, just with a different apple type as we don’t have honey crisp apples in Scotland. The closest I get to mixing fruit and veg in a salad is mixing fennel bulb slices and apple slices together but the “dressing” is just a little fresh lemon juice. I have everything on hand so I am going to make your salad this evening! Thank you for sharing such a “holy healthy” recipe! Every bite just shouts goodness! 💚

Can you put the sweet potatoes in warm or do they need to completely cool?
