Chris G, I took tin foil and put in the hole and pushes the edges in until it was perfect and semi rigid. Then I traced that on a piece of cardboard. I trimmed and added more cardboard until it was perfect. I used that as template to trace on a butcher board that was the right thickness. There are guys selling a plastic plate for covering the hole but the thickness is off so I decided to do my own.
Thanks for watching! The rudder feels like overkill when pedaling. I bought it solely because the motor. It's the one that comes on the Old Town motorized kayaks. Definitely not as smooth gliding as the original.

Did you notice any difference with the wider rudder?
Yes the larger rudder feels strange to the hand but turns much faster
