    Thank you so much for the recipe!! I made it completely dairy free (with condensed and evaporated coconut milk) and it was delicious!! Didn't miss anything from the dairy one- Love the flavor the tea brings !!!

    Very different recipe than what I was taught by my dad. I want to try this one soon! I do like that you didn’t use any eggs because that to me makes it more of an eggnog.

    • @CookingwiththeSenses
      @CookingwiththeSenses  ปีที่แล้ว +4

      Thanks! Coquito does NOT have eggs.
      In 1948, the Puerto Rican Cookbook had what was similar to our coquito BUT it didn’t have coconut like our current coquito… and in that book it was called “eggnog”.
      Considering that the vast majority of people in Puerto Rico didn’t have refrigerators (1948) then very likely the eggnog version was for those people in high society or rich who were the only ones who could afford the refrigerators.
      So very likely the regular people decided to adapt the drink into the “coquito” of today and totally eliminated the egg (lack of refrigeration at the time forced them to do so)- as lack of refrigerators would force them to do so. And instead became ingenious and added coconut.

    After I made the coquito and put it in the refrigerator, it builds big chunks of coconut. How can I have to where it doesn't have those big chunk of coconut coming out of the refrigerator?

    • @CookingwiththeSenses
      @CookingwiththeSenses  2 ปีที่แล้ว +2

      You can strain the coquito when you transfer from blender to the bottle to minimize that issue. Otherwise you will have to shake it well before you use it. Of course you cannot filled the bottle all the way to the top so you can shake it before use. Meaning leaving about an inch space from the top. However… see my “NOTE” reply to you…

    • @CookingwiththeSenses
      @CookingwiththeSenses  2 ปีที่แล้ว +3

      NOTE: My “diabetic friendly” coquito did not build that stuff up. That is because the “cream of coconut” was homemade using coconut milk and a sugar replacement. It tasted like the original coquito. I think you can do the same (but using actual sugar) for the regular coquito as replacing the “cream of coconut”. Greetings from Washington State, USA! I love the video! I usually make lots of egg nog for my large family every Christmas but this year I wanted to change it up and make coquito. I have looked at a lot of recipes but I think I will be following your recipe for the first time around. The spiced tea is a great idea, and star anise with coconut is very interesting! I'm wondering about steeping my rum in the spices for a day or two instead of making tea with water. What do you think?
    Either way, I'm excited to try this!
    Cheers! 🥂🥂

    • @CookingwiththeSenses
      @CookingwiththeSenses  ปีที่แล้ว +6

      The issue is the boiling point. Alcohol boiling point is 173 degrees Fahrenheit. Water is much higher at 212. So the molecules will dissipate. Might as well save the rum for the actual blender process.

    I made this with the "tea" and my Coquito still hardens up in the fridge?

    • @CookingwiththeSenses
      @CookingwiththeSenses  10 หลายเดือนก่อน +1

      You have to leave space on the top so you can shake well IF that happens. That is not an abnormal issue as the coconut milk can move up and harden SOMETIMES. It actually happened to me to one I prepared this week (not in this video) with a large bottle that I bought in a cheap store.
      EDIT: I used Coco Lopez in the one this week for the cream of coconut (while Goya for the one in the video) and noticed the can content was thicker than usual so I was not surprised. But coconut milk can SOMETIMES thicken to. Shake the heck out of it IF that happens - it is rare for me but it can.

    • @CookingwiththeSenses
      @CookingwiththeSenses  10 หลายเดือนก่อน +1

      @flem1064 It appears it is across the board. It appears lot of people are experiencing issues with coconut milk this year when preparing coquito or arroz con dulce. 🤔

Interesting to try and use coconut milk simmered until half evaporated for the evaporated milk. Also coconut extract.

    • @CookingwiththeSenses
      @CookingwiththeSenses  ปีที่แล้ว +1

      You don’t have to use evaporated milk. Just add a little more tea and a little more rum. IF the issue for you is MILK (lactose intolerant or vegan)…. then you will ALSO have to replace the condensed milk. In which case you can do so by buying COCONUT CONDENSED milk.
