How to Make Longevity Peach Buns (Birthday Bao)! 寿桃包

Longevity Peach Buns “Shou Tao Bao” 寿桃包 is a representation of Peaches of Immortality. It is typically served to elders on their birthday as a cake or gift that symbolises long life and wishes of good health.
In this recipe, I also will share a few tips to make this beautiful red bean paste.
The method is not only faster but also produces a fragrant and flavourful filling.
I hope that you enjoy the recipe.
LONGEVITY PEACH BUNS
Yield: 5 buns
Active time: 2 hours
Total time: 5 hours
Red Bean Paste:
60 g Red Bean
1/8 tsp Salt
1000 ml Water
40 g Granulated Sugar
10 g Vegetable Oil
5 g Glutinous Rice Flour
2 tbs Water
Buns Dough:
85 g Cold Milk
1/2 tsp Instant yeast
15 g Caster Sugar
150 g All Purpose Flour
4 g Vegetable Oil
Colouring:
Tea strainer
Toothbrush
2 tsp Water + 2 drops Pink food colouring (for the buns)
Green food colouring (for the leaves)
Steam the buns on medium high heat for about 10-12 minutes
*Note: After it's done, take it off from the heat (do not open the lid), let it rest for about 3 minutes in the steamer, then serve.

After dip toothbrush to the colour mixture, make sure that you tap the brush on kitchen towel a few times to remove excess liquid so no water drips through the strainer;
And remember when you brush it over the back of the strainer, do it gently in a circular motion.

for the fermentation, do you put the buns in the warm place?
The temperature where I live is 32 degrees Celsius, so I just place the buns in my counter top.
If you live in cold place, yes you need to find a warm place for the proofing.

发酵时间约为15-45分钟。
请注意,醒发时间取决于室温,如果你住在寒冷的地方,可能需要更长的时间,反之亦然,如果你住在炎热的地方,可能不需要那么长时间。

Hi, I used 25 cm diameter bamboo steamer.
Instead of red bean paste, is there anything else i could use? We don't like red bean paste.
You can use either chocolate, mug bean or custard filling if you want.

Can we substitute cold milk with cold water???
I don’t recommend to use cold water because the chilled milk contributes to a tender texture, while the addition of yeast enables the dough to rise and become fluffy.
