    💑 About Hercules Candy
    Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. Karen has been working for Hercules Candy since the twins (Craig and Cara) were about 6 months old and everybody else is a new recruit. Don’t forget to subscribe and hit the 🔔 for more videos!

      With all the new stuff lately, i've been thinking about the basement a lot. Major changes, quite different from a stove, a marble table, Lucy & Ethel, & a starch closet (too small to be called a room 😆) you have to duck to get into. I just wish Max was around to go through it with them, i miss him. So happy for them. They're gonna have to start looking for more space soon. 😆

    Im 71 yrs young. My little town had a candy shop. When I was good or special occasions, my grandfather would take me to the candy shop. They used these old machines to make candy, id watch with joy, glee and plenty of questions. Old Joe was so kind, hed answer questions, take me around and showed me how everything worked. The old candy shop in my Nana's town Sanborn's Candies closed just after the pandemic, and damn what a loss - I wish I had hung around to check out how they made their ribbon candy. You had to order the stuff around Halloween to have it before Christmas it was so , and it was impossibly thin, melted away in your mouth. Thank you for keeping these tools and methods alive!

    • @aprisia
      @aprisia ปีที่แล้ว +12

      You are viewing it in the wrong way. This stuff is commercial culinary equipment. Unless you are buying the cheapest stuff around, commerical culinary equipment doesn't break/fail like consumer stuff. It's a tool to make money, as such, it has to be reliable. It has to be designed to run for at least 12 hours straight, 5 days a week for years. Stuff that breaks at the rate of consumer stuff wouldn't be around for long, as it doesn't make sense for any business to use it in the long term. Even if you get it for cheap, the down time will lose you more money than you saved.
      There's a reason why brand new commercial culinary equipment is fairly expensive, it's made to be reliable and recoup investment fairly quick. For example, the ovens you see in convenience stores for toasted subs are basically industrial air fryers with a large stone/ceramic plate in them. But, they start out at around $8k and go up to $25k. Completely worth the money for a business that will use it. You should be able to break even in around a year unless, for some reason, you can't generate the customer flow.

    I make armour for a living and my oldest tool is a 17th Century Anvil stake. The majority of my tools are early 19th century.
    Sometimes I swear it is the ghosts of the previous owners who help me find solutions to the many technical dilemmas.
    When I first started making armour (last century) I was very precious about marking or scratching these irreplaceable antiques, but now I think differently, I figured I will happily add my story to them.
    Rather like the old saying 'A face without wrinkles is a book without words!' That's how I sleep at night anyway! 😉👍😂🤣😂

    I have passed up many videos of yours, time wise other factors, not you. But this one grabbed my eye, I loved the candy making in every video. Things back then were built to last like miro cookie press! thank you for your old school candy making. I must visit!

    I've always wondered about the spacing of the bars. Now I know the spacing is all about regulating the temperature of the candy and not just keeping it contained on the table.

    Its so nice to see you guys get your hands on some "new" equipment! While doing hard candy with the clamp press isnt technically "hard", that new machine seems like it will help you turn out batches much faster and easier! Im sure those addicted to your sour candies will be elated lol!
