Hats off to you for such determination! You might find 2 tips that I was given helpful in preventing a capsize.
    1. Looks like you might be keeping your blade in the water too long. Three things happen when you take your blade too far back: The wing blade can dig in and cause a capsize, you lose your ability to stabilize yourself, you no longer have power and can in fact slow the ski down. General rule is to spear the blade in as far in front of you as possible, and take it out of the water sooner rather than later, especially with a wing blade.
    2. My coach told me that if I suddenly feel unstable I must “aggressively attack with a stroke” I.e. Don’t fall into the trap of trying to use your paddle to regain balance like the guy on the tightrope. Instead take an aggressive stroke with the blade nearest to the front. Even if you are falling towards the right, if your left blade happens to be about to enter the water throw your body and weight into a strong stroke. If your right blade is about to enter the water do the same - in that situation you don’t have time to swap around and the main thing is to have a blade in the water in front of you.

@@r.g.s.8737 Enjoy the paddling mate - best place to be. Just remembered another “anti capsize aid” : The paddle slap - When you experience anything that effects stability (e.g a wave hitting you broadside) you can regain stability by hitting the flat of the blade on top of the water with the blade best positioned opposite your hip or behind you ( similar position to when you are stabilising while on a wave) The harder you hit the flat blade down the more it will remain on the surface and act like an outrigger. (Like the faster you hit the water the harder the surface. Once again be a bit aggressive - the faster the better.

Here's my take as an intermediate surfski paddler, but advanced sea kayaker. Each emphasize different things but has relevance to the other discipline.
Boat stability comes from body position that can be seen by minimal deviation of the head over the longitudinal center-line and from upper body separation from the lower body - being relaxed. Also, from paddle support as one paddles. And also from paddle support when the first two fails - bracing. Basically one remains centered with strong paddle support, which means you should always have on blade touching the water, on the ready, even when re-entering with legs not yet in.
I've slowed the video down and saw your head going back and forth - side to side. When in trouble, I saw reliance on adjusting body position without engaging the paddle..I saw timid paddle plants, often not fully burying the blade. I saw no per-emtive paddle support used meaning an early light touch - momentary low brace that would have saved the day before the need for an aggressive slap brace, which wasn't attempted.
I've struggled recently, too, with some age related balance issues and had to sort things out. Luckily I have the brace thing down without having to think about it, so I rarely go in. I figured out that when on top of the wave with sudden boat control/balance problems to do two things that helped. 1. Plant super aggressively, don't be afraid to make a splash. Where in the past I would do a quick brace, stay upright but miss the wave, now I have more and earlier power and find that the plant is a form of brace! 2. Don't worry if the boat suddenly tilts over uncomfortably as long as my head is centered and I remain loose. The boat will self center with good stroke dynamics and no brace is required.
Work on getting more power from torso rotation beginning as early as possible. Rotate around your center-line with minimal side to side arm paddling. Exit the stroke earlier, which will increase stroke cadence with each stroke giving support on the catch. This means more frequent support from the higher stroke rate as well as not lifting water that also diminishes stability. But, when trouble comes, extend the stroke back while flattening the blade with a slight lean onto it for support. It's quick as a flash, super stable, and is available on each stroke. I saw you leaning away with no paddle support. Lean in to the trouble side and onto the blade. The better your body position and the stronger your catch, the less you'll need recovery maneuvers.

Keep persevering, you'll get there :) I slowed the vision down at 5.40 and 9.20 and to my eye, I can see your left side collapsing (think of a piano accordion). The gap between the base of the left side of your rib cage and the left side of your pelvis is now shortened and your left hip is rising up which causes the boat to tip to your right and.....next thing swimming! Don't worry, we all experience some form of this at some stage I'm sure. I know I have. Think of a metal shaft passing through your head, down your spine and through the seat of the boat. You can rotate around that shaft, but you can't bend your torso to the left or the right. I qualified coach would explain this better than I can, so I suggest you have a look at Ivan Lawlers videos, especially leg drive and rotation. Have fund.

Reduce your blade feather angle, so your brace stroke on the right side can slap you back upright rather than digging deeper into the water.

Reduce your blade feather angle so your right side brace stroke works to keep you upright.
