Ducks can pick you out light you’re highlighted on cloudy/ overcast days unless it starts raining or snowing. Anyway that rain and gadwall coming right in reminded me of a hunt I had last year where I shot 5 gadwall in flooded timber standing next to a willow tree with rain freezing on my jacket and waders. Loved it!
I love those kind of hunts. we typically like overcast because it means a cold front is coming through and thats our best hope that far south for fresh birds
I live on the eastern shore of Maryland and we eat ate a lot of soft shell crabs being on the Chesapeake and you don't ever batter them cook them in just butter and a little bit of salt and pepper put it on some toast or just eat it the way it is can never go wrong

Louisiana is the equivalent of Oaxaca in Mexico: The best place for the best authentic, delicious food in both countries. Great stuff. Thanks for sharing.

Love this show and all other Meateater productions. I am not a hunter but fishing is my life. That last boat ride back to camp that guy looked miserable and I thought, how many boat rides have sat through and looked just like him. All the while thinking why do I do this again? All for the trill of the catch/hunt!!
This show is epic. Very, very similar to our fishing trips up here in Ontario Canada. Catching fish and hunting birds is nice, but the comradery of good friends and great food is what it's all about.
I love this series!!! Reminds me of my buddies and me on our annual Peace River strip here in Florida. You guys have to do an episode where you invite Clay Newcomb. Arkansas guy hunting ducks in Louisiana, what could be better?

This show is very well produced - and it still has… burrs and grit and beers in camp and swearing and a like… genuine, this-is-what-hunting-camp-is feel. @@jean-paulbourgeois2871 I do my deer camp has been going for almost 40 years, we just don't duck hunt. But like your group our bonds are deep and the hunting is just part of it. Best of luck to you and your camp , it's great to see the culture is so wide spread!
Great show chef. We have a similar dish we do in India with our seafood. We make onion gravy with tamarind sauce and simmer our seafood in it. Enjoy watching your show
@@jean-paulbourgeois2871 We call it Fish Pulusu. It’s very similar to court bouillon but we use tamarind extract for sourness instead of tomato. Also we use fish steaks.

I see them fellas in down jackets in south Louisiana . Growing up in Napoleonville, I’ve never heard of a down jacket until I joined the Airforce and had to live up north where it snowed. Such a weird thing for me to see on the water that’s all.
That also goes for the crews from out of state that came sleep in tents to help us get power. We fed them all ! Some didn’t want to leave some wrote home to there wives with recipes. Southern hospitality runs deep here
That was amore of a courtbouillon or creole/etouffee than a sauce-pe-caunt. Of course, there is not that much difference between any of those dishes. Sauce-pe-caunt doesn't have a roux base.

It's funny because gadwall are usually the most readily decoying birds up here in ND.... Hunters usually have to try and have restraint or else you'll get a limit of all gads. I love shooting em and eating em so it's fine by me lol

in the salt water marsh here in south LA they are more likely to commit to the decoys, but for some reason in the freshwater marsh they are skiddish
