The Happy Pear's 5 Minute Curry | Vegan Recipe

Back in their kitchen in Greystones, Ireland - The Happy Pear show Tanya & Derrick their famous 5 minute curry recipe! This is a super simple, quick, nutritious and TASTY plant based recipe!

Ingredients (rough quantities):
► 1x tablespoon cooking oil for the pan
► 1x red onion (or whatever onion you prefer)
► 4-6x cloves of garlic
► 1x tablespoon(ish) of chopped fresh ginger
► 1x large chili pepper - (add to taste)
► 1x can chopped tomotoes
► 1x can chickpeas (drained)
► 1x can coconut milk
► 1x cup coriander
► 1x cup of baby spinach
Spices:
► 1x tablespoon of turmeric
► 1x teaspoon ground cumin
► 1x teaspoon ground coriander
► 1x tablespoon medium curry powder

what type of curry did u use?

They used a generic 'medium curry' powder, as well as the cumin, coriander and so on that Steve had on the plate. Widely available in Ireland and the UK. Not sure what that would translate to elsewhere in the world though? Hopefully that helps. We'll build a list of ingredients for the description.
