Just this morning I was thinking that from the channels I follow, this two are the ones that align more with my goals, vegans with farms :p What a funny thing to see this video a few hours after the thought 😂
You need weigh the veggies AND the water weight first THEN calculate 2% salt based on the combined weight. You have made a 2% salt solution, added a random amount of tamari, and then unsalted water. You cannot know what % salt the final solution is which is risky.
Let me add my two cents here. Please don't follow this procedure. Although it might just work, the following mistakes should be avoided: - Jar is way too full, you'll end up with brine all over the place - Funny like you measure your salt to the milligrams but then just add a bunch of plain water :) Just salt your veggies and let them sit for an hour. No massaging necessary, the veg contains all the liquid you will ever need for your kimchi. I never add any additional brine, let alone plain water. - no burping necessary with this type of jar. The rubber seal doesn't let anything in but lets the gases out. - instead of the leaf, find a little jar that will just so fit in the neck of the big jar. That will keep the liquid up at all times. - please peel your ginger with a spoon - making good kimchi is really no magic. Just choose any raw veggies you like (using at least 50% cabbage as a base). - you can add fruit but no more than 10% of the total weight. You don't want your fermentation go into the wrong direction due to a large initial sugar content. Good luck!
Guyyyzz, just do not seal the lid with the rubber. 💣 😂 Then no need to shake or burp.. All will occur naturally and relaxed. I lay my Jars in a larger bowl, to collect the spill of liquids if it may surge 🌊🌊 Happy fermentation Mm
Normally if we were picking carrots or root veg we'd eat them without washing them, low lying leafy veg we'd tend to wash incase of rodents or other animal urine. And double especially when you're planning on fermenting the veg you don't want anything too gnarly on them.

What's the reason for peeling ginger with a spoon?
It's just so much easier to get into all those folds and you don't cut away too much ginger flesh
