What strikes me as so beautiful about Japanese work-culture is that they will take any culture- and craft and push it to its limit. Doing it so well that even people native of that culture will laud their craft. I've seen French compliment their croissants and bread, I've seen Germans compliment their sausages. It's quite beautiful to see and makes me feel proud of our species.

So, so good. I appreciate this Japanese master giving this north western European tradition respect and love. It does not surprise me at all that he won gold at the world championship.
As a german i can say this man is a grandmaster of his profession and it's a pleasure to see that he evolved his studies from germany. He can mess with every butcher in my country... in the world. Very impressive!

I am an American who has lived in Japan for five years and I am not surprised at all by this guy's skill. I have found most sausage in Japan to be excellent. The only kind I miss is sweet Italian sausage which I have not been able to find here. On average, Japanese sausage is better than that found in the US.

As a person who love Sausages, i live in Denmark. I always grill my sausages before eating, i know they are smoked, but i do grill them insted of boiling them. i Think the taste is so much better and the crispy skin takes it to the next level.
Knackwurst is already crispy. If u grill it, you destroy it. It has to be cooked. Weisswurst is simply made this way to be cooked an this is how its meant to be prepared (its form Bavaria) And Frankfurter should not be either grilled or cooked. Bratwurst, Thüringer etc. are made to be grilled.
When I see someone in one Country making traditional foods from another Country, I am happy to see it and I am sure the customers are very happy too. Making some national recipes are hard to do because either you cannot get all of the ingredients you need, or you need some sort of a specialized kitchen equipment or that it is just so labor intensive that you don't want to undertake the challenge. This where a specialty shop like this comes into play and it is all made in a homestyle fashion, just on a larger scale. I have a German friend of mine here in Thailand that bakes authentic German breads, and he lives about 1hr 20mins away by train. But I can place a big order with him, and he will meet me at the train station and give me a tour of his city and show me his operation and we have a nice lunch and beers together and then he sees us off on a bus home with all of the goodies he baked for us and I am as giddy as a kid finding a 4-leaf clover. You just don't get service like that except at a home-grown operation from someone that is putting passion into their foods. I would spend a lot of money in a place like this and stock up and visit often. Decades ago we had a small German bakery/Meat place that opened in an old convivence store location that did it all like this, but on a smaller scale and made authentic German desserts too, it was a fantastic place to visit and spend my money. But sadly she closed. I have an authentic Mexican restaurant run by an older woman and her family that is to die for and also a great Asian food store that does things similar, but on a smaller scale too. So, if you have any places like that in your area, even if you have to travel some distance, it will be worth your while to visit, purchase and get the real deal from them no matter what Nationality of goods they are producing. Recently in my city, an Eastern European store opened that carries sausages from Poland, Cheeses from Bulgaria and Wines from Ukraine just to name a few and I can drop $200 USD very quickly Ha ha.
I salute all Japanese craftsmanship IN ITS TOTALITY. Their dedication and determination to produce an end product to absolute perfection is a sheer joy for the body, mind and soul. Long live the Japanese culture that sets the standard of near perfection (if not perfection) worldwide in a "sad world" of mass production. The marbling of that beef jerky is amazing...I know it will be so tender and soft!...but the real western beef jerky is supposed to be dry and tough....this is what travelers ate when they went long distances and ahd to pack something to eat.
