I’ve been trying to figure out what to do with the rest of a rotisserie chicken that I wasn’t able to eat as much of this week, as well as some softening jalapeño peppers that I don’t wanna take an L on, and this just may be it! Made this tonight with the help of the wife. Gotta say, if you can follow directions this guy is on point. I would say this is a great baseline as a beginner would benefit as is, and someone a little more creative can boost things here and there. Think of it like sauce from a jar. Usually good but can be improved upon based on taste and personality. I will certainly try others from this channel. Well done!

Looks delicious! Jeff, have you ever tried roasting your poblanos whole? Once the skin blisters you can peel it away on with a paper towel and then dice.
Just made this in my instant pot..first meal I’ve made in it. The only thing I changed was I used ground venison instead of chicken. All I can say is WOW!! I might have to enter this recipe in the next Chili Cook Off! Best I ever made, THANK YOU!

Oh Jeff I can absolutely count on your recipes to be totally delicious! I just made this today. I left out the additional 2 tablespoons of butter and the jack cheese. Trying to keep it light these days, you know. Even without those things it was sooo delicious! Tangy and hearty! Thanks for everything you do!
Thanks for a fantastic recipe, Jeff! Couldn’t find the Chili Base paste anywhere, but it was still great without it, used all the rest of the options. We used the Ninja Air Fryer to roast the peppers (400 degrees for 8 minutes) instead of heating up the oven came out perfect!
If you save the the nacho chips that are crumbed at the end of the bags, you can serve with them on top or in the bottom of the bowl. Can’t wait to try your version!

Looks great, I've stopped using canned beans, I'll precook them rinsed but unsoaked in the 3 Qt mini and then use them instead of canned in a recipe, 1 can = 1 1/2 cups precooked. Like the texture of the beans better.

I made your recipe… I had tomatillos and jalapeños that were given and made homemade salsa verde… and added it in. It turned my white chili green 🍀🤣 tastes good though!

Draining and rinsing canned beans is extremely important. a lot of people don't realize that the juice in canned beans is what makes you fart. not the actual beans. I'm being dead serious here people.
We have made this several times and this is now one of my favorite recipes! We just made it for a quarantine dinner. We had to use canned chicken though because we can't find any fresh or frozen chicken in the stores right now, but it is still amazing, even with canned chicken! I love all your recipes! :)

An alternative to thicken the soup, I use 2 blocks of Queso cream cheese, it takes this soup up a level.

Next time try a can of hominy instead of one can of beans or instead of the yellow corn. It’s white in color and I use it in my white chili.

To thicken it up you can also take some of the beans and blend them and put them back in that because it up without the unpopular corn Starch
