Dolphins use their melon to echolocate or even stun their prey. Sharks use their sense of smell and their lateral lines -- which detect electric signals generated by movement of muscles.
I love the fact that yes something is eating the bones! They're small "worms" that sink their roots in and feed on the marrow. Also there is a point to be made about bones potentially being sand. There are parts of bones that cant be used after a while and are just thin more porous versions of their former self meaning its easy for them to break down. Whether its the oceans heavy currents smashing them into rocks or creatures messing with them the bones will eventually be broken down. Bones are sand. Sand is bones.
