On the overload protection we should use the nameplate times the percentage, right? This video says to use full load current from the code book but if you look at 430.32 it says nameplate full load current. Thank you for the videos.

I do not. I teach JW prep for a college in Alabama. I use Tom Henry material for the class. I do have other videos for motors, ampacity, and ranges.
For step 1, you should use the table in the NEC as opposed to the nameplate. That is because the motor may be replaced with a less efficient motor.

But now you're changing the electrical architecture of the system. Anytime you change a component, you need to investigate the impacts of that change.
Can you do steps 3, 4 and 5?
Someone know how to calculate a 300hp motor and its cable size use?

Wrong. If it does not mention the service factor OR the temperature you use the 115% column.
In the slide before he starts answering where he says to pause, it specified 35°c
