Really interesting upload. At 4:11 he mentions that the device is checking the viscosity of the sugar syrup. That's a refractometer, it's checking the amount of dissolved solids (in this case the % of sugar vs water). Hope I'm not comiing across as nit-picking, but there is a difference.
