Blind Taste Test with Wild Game Backstrap | 5 Different Types

  • Marcus Hockett decides to do another version of the wild game blind taste test. The previous time, he did it with burger but now wants to test his theory again, but with backstrap.
    This blind taste test uses backstrap from whitetail deer, mule deer, elk, moose and antelope. All are cooked to the same temperature and the participants get to try every species and write down which they think it is.

    As a control, add a cut of beef! Some of your taste testers said it all tastes like beef, so do a test with some beef thrown in!

      beef is probably more noticeably fatty than the wild game, i think you would visually be able to tell

      Might have to actually blindfold people for this one. A lot of visual characteristics with fish.

    Another fun video! You should throw in a control and just have a chunk of beef backstrap. Also, another fun one would be pork, with a feral hog, javalina, and domestic. Well done gentlemen!

    I'm pleased to see that in truth, my taste buds are about on par with these tests. GOOD meat, just tastes GOOD, and when well cared for in the field/fire, isn't much different than a good cut of beef. I agree with adding a "control" of some beef in to prove that it's ALL in one's mind whether or not they "like" game meat.

    I do like the blind tests, but also maybe do some cookoffs where everyone has the same species/similar cuts and try to explore different cooking methods. Smoked/grilled/slow cook, etc (try and show people new methods of cooking their game)

    This series is extremely interesting. Even with a larger sample size of testers that included some avid and successful hunters and wild game connoisseurs the success/failure rate was the same as last time or pretty close. I would hope that I would get whitetail right since that is what I live on here in West Virginia.

    Y'all should do some videos on dry aging game meat. I dry aged an Elk steak for 14 days about a month ago and it was awesome. I just used the Umai dry aging bags and it was super easy.

    Interesting the one fellow thought wild game meat tasted no different than beef! On the next one try throwing a cut of regular store bought beef steak in along with wild game!? Cool video!

      Interesting. I usually hear the opposite, with dove being good and not liking duck.

      Really? well maybe it's just an okie deal. The dove recipe we hear about is: wrap the dove in bacon with cream cheese and a jalapeno, throw it on the grill for 15 mins, eat the bacon an throw the rest away! ;) I've made many a huntn/wild game eatn believer from an inner tenderloin, duck steak or pretty much any cut deep fried

    Hard to do with a little piece like that! Beef it up a bit lol! with pork and onions to boot! Make it wort while!

    let them know what they are eating and then see if they can pick it out of another group. That would probably be a better test of "if these taste different or not." The way this is set up they are having to pull from experience or lack there of to find the answer. That would be neat test. I also agree with putting some beef in there some way just out of curiosity. Both grain finished and grass fed.

    Oh man - REALLY late to this party. But next time add some non-game variety. Pork (probably everyone will get that one right), beef (as others have suggested), lamb, goat, rabbits/squirrels (probably will be guessed because of meat size), wild hog (OK another 'game' animal depending on you location but just as a contrast to pen raised pork) etc. Informative, fun test and great video. Results not unexpected.

    Great job guys! Lots of fun. We do this with wine once per month, but now I have to do this with wild game. First we have to harvest all of these game animals! No small task.

    Marcus, do a cook off where each person brings their favorite wild game meal and then choose a winner. Make it even better by having each person share the recipe/preparation. Maybe assign a different species to each person OR mandate a required ingredient each person has to use top chef style!

    I have had Whitetail Elk and Moose. Doesn’t surprise me the Moose won. Elk is fantastic also but will dry out if not careful. Never had Mule deer or antelope. I would think both would have a Sage flavor. Good test and I think Randy might have got more cause he sure had short all of them. Probably had them all over a camp fire.

    I know that I was not able to tell the difference between mule deer and elk. A couple of years ago my brother got some of both from a co-worker and it was more than his freezer could hold so he shared the wealth with me, and both the wife & I were not able to tell them apart.

    The one that would help myself and family the most is if you add beef. There’s always someone in the family that doesn’t want to eat game meat because it’s “too gamey” or they “prefer beef.” I’d love to see if you guys can tell the difference and put that argument to rest

    These videos are great! We’ve done a duck taste off and found habitat was almost more important than species. Would be interesting if you could do a Colorado elk vs Arizona.

    Should pick one species (Whitetail per se) and try the difference between buck, doe, buck in rut, doe in rut, year old deer, etc. Maybe even different times of year when they have differing amounts of body fat. I think it would be interesting to see if those factors actually impact flavor.

    great test! I, like others have mentioned, would like to see some store bought meats thrown in for comparison. Throw some lamb, and beef in there...Loins again also if you can test that portion of the game animals again. Freezers might be low on those wild game cuts after this...Would love to see some of the Bison thrown in also! Cheers!

    You should do ABX testing to see if there is even a perceptible difference between the meats. ABX testing is a standard method for determining if there are detectable differences between two stimuli, in which two reference samples (A and B) are given and the subject is asked to classify a third unknown sample (X) as either A or B. This would help you ascertain if it is even possible for people to have a preference, by determining if the differences between the meats are even perceptible.
    Since there are variables other than species (age of the meat, damage during hunting, butchery, etc.) you should probably have multiple samples of each species. This would let you determine how individual variation between samples of a single species compares to that between different species. For example ABX testing may reveal that 2 different mule deer are as easy to tell apart as a mule deer and and elk. If you want to get really scientific with it, you should preform all these tests with a double-blind setup, where the person administering the test doesn't even know whether X is A or B.

    Interesting results. I can say I've tasted Buffalo and it taste just like grass fed beef (just lower fat). Venison (whitetail depends a lot on the sex and age of the animal as to flavor) - cooks up a noticable brownish color to me. My favorite by far is Sika deer (an oriental elk) - cooks up sweet and reddish (eastern shore wild animals). Np access to anuy of the others.

    Blindfolded upland/waterfowl game taste test. A lot of ppl I have cook birds for say that grouse and quail taste the same.. I have also heard from the same group of friends I have cooked for that dark meats such duck and dove are the same for them. I think I can tell the difference but I also know that meat I’m putting on the grill and fell like it’s all a mind trick. I like these videos a lot with the different recipes and how you guys are showing how similar each game spices taste alike. On a side note I think it would be cool to see if you guys could do a store bought burger test and a wild game burger test and see if anyone could guest witch one is witch. I grew up in Southern California and as you could imagine there are a lot of non hunters I know that would not eat wild game and I would have to truck them into eating it and then revile to them after the ate everything in the kitchen and would ask for more that it was 100% wild game. Lol

    I have only eaten whitetail and antelope. The antelope I ate was so many years ago I don’t remember it. I am curious if they could tell a difference in the tastes. We know they couldn’t identify each distinct taste for the animal, but can they say there is much of a difference between any one of them.

    It's pretty telling that both times now, the results are equal to simply guessing. 1/5 chance of being right and a 20% success rate. Either they all don't know their meat, or it tastes the same. We know they're hunters, so my guess is the latter.
