- This is how a top chef that hunts prepares his venison.
Jose Souto has been teaching young chefs about the incredible versatility and quality of wild venison for years.
In this video he wants to show that it's not just about the loin, the haunch offers some spectacular flavours and tenderness to match, if not beat the celebrated loin muscle.
Jose expertly prepare a loin steak for the bbq and also demonstrates the cuts that can be taken from the haunch of a roe deer. He also shows us why he uses the knives he does.
This is not just about flavour, it's about presentation and Jose shows us how to not only cook the steaks to perfection, but make them look amazing too.
Finally professional deer manager Paul Childerley is blindfolded and told to choose between the 2 steaks - which does he prefer!!

As a professional butcher of many years I still enjoyed how a expert game chef prepares the cuts and cooks the haunch steaks .
I must say that the topside steak with a Cumberland sauce is amongst my favourite meals
Of all the deer butchery videos I've watch and I've watched a few,
this must be one of the best, because I got so much information
from it. By the way, Jose showed and explained it very well.
I was pleased to see, that I have been doing it nearly correctly.

Flint and Flame knives
I butcher a lot of Roe deer and found this video to be very interesting and useful. Very well presented. I learned a lot from it. Love those Flint and Flame knives. I have them and they are excellent.
Enjoyed watching the video, the butchery was educational and as I've always said, meat from an unstressed beast and not in rut is meat that cannot be beaten.
Interested to see similar from Souto for the humble rabbit.

Great video thank you, I am just entering the world of stalking, looking to have more meat varieties and ensure a healthy population,
Only thing I would ask is can ghee be used to cook in as I do not touch the poison ( in my opinion ) that are seed oils .

I harvest, butcher and eat (together with my family and friends of course) about 30 wild game animals per year, including fallow, roe, red, wild boar and moose. Some are harvested during driven hunts, some are harvested by stalking. There's absolutely no correlation between hunting method and "strong flavor" as you put it. A shot placed well, a well handled carcass and proper hygiene and cooking is everything. Whether the deer was being driven by a hound or a human, or if it was grazing in a field when it was shot, makes absolutely no difference. I've done several blind tests throughout the year and have handled several hundred animals by now, so what you're saying is just bollocks. Unfortunate, when the rest of the video is interesting and the cooking looks good.
