  • Gooday everyone and yes, it's dinner time again.
    This go round I'm attempting something I've never cooked before - Fried Lemon Chicken, with Capers and Pasta. I've cooked plenty of Spaghetti in my time, but the rest is all new to me.

    Land Rover Discovery 2: Oct 8, 2016, CHG Video. Britpart Dog Guard for Jack the "Guard Dog." Jack's movie appearance and acting scene was perfectly played by him, but was too brief. He seems like a great dog with a wonderful temperament. You must have enjoyed his presence and companionship very much. Sorry Kevin, Jack stole the show. Thanks Jack, "Country House Dog." What breed is Jack?

      Thank you Bill. Sadly Jack passed a few months ago. He was more than just a companion and fills me with a sense of loss and longing to this day just thinking about him. Leaving him behind was a wrench. A truly kind, peaceful, friendly and caring soul. He was a Ruby colored Cavalier King Charles Spaniel. 🙂

      @@CountryHouseGent We thought our 5 year old female cocker spaniel was perfectly healthy. Then Marti's immune system started attacking her red blood cells (autoimmune hemolytic anemia). In less than 24 hours she had "passed on"; Memorial Day morning, May 30, 2022. Pretty much share the same feelings as you about our special friends. Marti meant a great deal to us. Now it makes sense to me, why I wanted to post the comment about Jack. Maybe Jack and Marti are hanging out together? You are truly the "Gent of the Canals." Thanks Kevin.

We especially appreciated what you said because we similarly felt the same way about Marti. You helped with the process and memories. Again Kevin, thanks for sharing.

    Yum! That chicken dish looks delicious. Hint: when you put the chicken in foil, put the shiny side in and the heat is reflected inside.stays The dull side absorbs the heat. I’m going to try this one! Thanks.

      In case you were wondering, Puyallup is pronounced, Pyew-all-up. Like most places in Washington state, they are named after First Nation peoples (Indian tribes) out of respect.

    That looks fantastic! Frying up chicken like that is easy and classic, and you did a bang up job! I’m not a fan of capers but with lemon it always cuts their strength, so excellent work on that too! This looks like a winner for the “Cooking with Kevin” Cookbook!

    Nothing like" a day late and a dollar short"! I just found the previous cooking this morning! I love the fried chicken done like this. I grew up in the southern United States and to us it is breaded in a milk wash and breaded with seasoned flour. Then in a cast iron skillet fry it in lard til crispy! Very decadent by today's standards but if done with enthusiasm and driven by the fact you have a chicken in the yard. Well, let's just say you are good to go! Love the haircut! Sorry couldn't stop myself!

    Alright Kevin, I have received one of your CHG mugs. They say be brave and try something new every day so I actually had a hot chocolate in it instead of tea. It worked a treat. It’s amazing what these mug making boffins can achieve.

    That looks delicious! I do like a piccata sauce. I know it takes some organization to cook in your small space, and perhaps some strategic editing, but you make the preparation look quite straight forward. Always good to see you. Thanks.

    We, in Kentucky, always fried chicken similar to that . We used either lard, or oil for frying. We love it! I always used salt and pepper, too.

    We live in Texas. I cook fried chicken a lot…it’s a Texas/southern USA thing. I took photos to go with directions but can’t see a way to share with you. So here goes. Dredge each piece of chicken in AP flour. Then dip in a beaten egg/salt and pepper mixture until covered, then dredge in panko bread crumbs or flour again until covered. Shake off access. Heat canola (rape seed) oil until about 300°F. Fry about 5-7 minutes on a side until done. Drain on paper towels. Easy and extremely tasty. We primarily eat chicken breast tenders but this can be done with all pieces. Those with bones cook longer. Done temp is 165°F. Enjoy Southern fried chicken.

    This dish looks so good. I love capers and they taste great with lemon chicken. Good for you that you have cooking skills and are trying to stay away from all the processed food out there. That’s why you are looking so great!

    My goodness, where have you been? We've all missed you. The hair cut does make you look thinner and younger. I'll bet, also cooler. The chicken/spaghetti looked fabulous. Chicken breasts are really good many ways. You might want to try a "stir fry" cut up chicken breasts cooked, then with red, green and yellow bell peppers, red onion, zucchini cut up. Maybe some broccoli. Then add some honey and soy sauce. Cook till tender and serve over rice. Wonderful taste. We'd all like to see more of you and of course, your cooking skills. Take care out there.

    G'day Kevin. I totally agree with comments from people who say you look good. Boating life is doing you good. I looked at some of your early vidoes. Since you have been on Aslan you do look so healthy. This is why I have the ambition to sell up here in Australia. Move to the UK and buy myself a Narroboat and cruise on the cut.
