    RunAwayRice I have always love fish ball and cake. When I was 7 yr old I saw my neighbor doing. It was so difficult. But your recipe is so easy to follow.

    Thưa chị, em làm chả cá 2 lần, kì nào cũng bà chả bà chẹt bên trông, mềm và ướt. Ăn chả ngon phải bỏ hết.
    Uổng cá, tôm và mấy con mực :(.

    I didn't have an appreciation for this when I was younger, but now I see you making it and I can see the culinary possibilities. Yum, especially in a broth-based noodle bowl. :) You mentioned keeping the fish cold, but I'm curious how this was traditionally made since the people in SE Asia didn't have refrigeration?

      Doodah Gurl I think you know the answer! :) In SE Asia, the folks have the benefit of getting fresh fish and that is the big difference. Once the fish is frozen, it needs to stay chilled or the meat gets mushy in this recipe. It's pretty rare to get freshly caught fish these days. If you ever get a chance, try it in this recipe and you'll definitely notice the difference in the texture. Thanks for stopping by!

    I love watching your videos. But could you explain why when we make cha ca, we have to use tapioca starch, but when we make the cha lua, we have to use potato starch. Would it matter if I made cha ca but use the potato starch instead? Thanks for all the help. You’re recipes definitely helped me learn more about my Vietnamese roots!

    Chi Trang oi em, co tham khao cac cong thuc khac thi thay co them buoc quet cha ca bang KitchenAid. Nha em thi khong co stand mixer nen em khong ro buoc nay co bat buoc khong chi?     Silly question. Can you substitute the tilapia for another type of white flesh fish? I ask because where I live tilapia is considered an invasive species and you can't get it at all (even if you can catch it, you aren't allowed to eat it).

    Hi Trang,
    I've noticed that you like to a bit of color here and there to stand out from the background, like the light blue long spoon to remove the garlic and level out the fish cubes along with the light green spatula to transfer the cubes into the food processor. The glass plate also gives the illusion of more space. Can you tell me the brand or send me the link to the long spoon, spatula, and glass plate? Thanks :-}

      Hi Wendy, I do like a pop of color here and there. The long blue spoon and thin green spatula are from Marukai, a Japanese market here in Southern California. The glass salad plate is from IKEA. I hope that helps.

    The fish cakes I've had at a Vietnamese restaurant is crispy and it look like it has some sort of wrap around it. It's so good!

      Some restaurants roll the fish cakes in corn starch to give the outside a crispy texture.

      Barramundi has a softer and fattier flesh. I think it's worth a try if you enjoy it. The colder the fish, the more texture the fish cakes will have. Good Luck!

      SweetHina Hi! Definitely, shrimp and/or lobster would take it to that next level. When adding shrimp or lobster, I use just 1/2 portion of additional seafood to 1 portion of fish. That way you still get the slightly, chewy texture. Enjoy the recipe!

      You can use any fish you like with a medium to firm texture, snapper, halibut, etc. Avoid the delicate-meat fish, like cod, as it yields a fish cake with a mushy texture. Good Luck!

      Tôi dùng cá Tilapia, mua ở Costco, vì mua nhiều nên phải bỏ vô Freezer
      khi nào làm mới lấy ra để tan đá, rồi làm như cô chỉ, nhưng sao cũng không dai.
      Lần sau tôi thử mua cá tươi về làm liền coi sao, hay cô có cách khác
      làm ơn chỉ dùm

      +Hoa Dang Hi Hoa, I use tilapia too. Sometimes if you overwork the food processor, the blade gets hot and that warms up the fish making the cakes mushy. Try making a smaller batch and not processing so much in your food processor and see if you get a springy texture. Good Luck!

      Luckyna Sourn Hi Luckyna, are you allergic to baking powder or just don't have it at home? If the latter, you can make your own baking powder by combining equal amounts of cream of tartar and baking soda. Hope that helps!

      +thu Nguyen Hi em, Cá Basa làn chả cá cũng được. Máy này có thể dùng để xay thịt làm chả lụa. Nhưng phải để thịt thật lạnh và xay từng ít một thôi. Thịt heo cứng hơn cá, khi máy nóng phải nghỉ chờ máy nguội mới xay tiếp, máy nóng sẽ dễ bị cháy và sẽ làm chả không đươc dai.

      ngosuong17 Cám ơn em, chị đã sửa lại công thức rồi. Chả cá chiên xong có hơi xẹp một chút. Em xem trong video lúc chị cắt chả cá. Đây là chả cá đã nguội. Em nhớ đừng có cho bột nổi nhiều hơn đã ghi trong công thức, thì khi chiên chả không có phồng lên nhiều và lúc nguội cũng không xẹp xuống nhiều và nhăn. Chúc em thành công.

      Hi Noel, any firm-flesh fish works great in this recipe. I've made the fish cakes with haddock, halibut, mahi mahi and mackerel--all good options. Enjoy the recipe!

      +Tô Hoàng Khắc Hiếu Hi em, you can use a chày to grind the fish. For homemade fillets, I use tweezers to remove the bones. It's a lot of work :)

      @@RunAwayRice i did try this last night, it didn't turn out like yours but it was ok. The reason, i used a fish from the frozen section called Pangaseous, it had too much water in it. I just added a little bit of flour and it was ok. Thanks for this, my wife loved it!

      Use red onion instead of shallots. Substitute tapioca starch with potato starch or corn starch. It's not an exact match but will be close.

      Sorry, this isn't the recipe for tteobkokki. The texture is different because it has more meat than rice flour.
