    Buttermilk is one of my favourite ingredients to use when it comes to baking! I use it in so many of my recipes, including my soft vanilla cake and red velvet cake. If you’re in a pinch and don’t have buttermilk on hand, or can’t easily access it, you can make a great buttermilk substitute right at home.

    This is exactly what I do when I can't get buttermilk in the grocery stores. I just add white vinegar or lemon. Now also taking your cornstarch tip, my cakes have become softer than before. Alhamdulillah.

      Heya! Yess yoghurt is great too, it's another fav ingredient of mine and works in a similar way to buttermilk! :D It is slightly heavier though, so sometimes yoghurt works better for certain recipes and buttermilk with others depending on the recipe :)

    Acid in milk is a good idea for baking but you cannot drink it. If you want to make real buttermilk it is very easy. It is just like making yogurt at home so if you already make yogurt you can already make buttermilk and it is even easier to make buttermilk. They sell freeze dried buttermilk starter cultures for real buttermilk just like they do for yogurt but you can also use fresh whole buttermilk as your starter. This lets you keep a perpetual supply of buttermilk on hand that you can drink as well as bake and cook with. The ratio of mixing is very simple, for every 1 cup of whole milk you add 1 tablespoon of existing buttermilk. For example: In a clean mason jar mix 2 cups of whole milk and 2 tablespoons of existing buttermilk. Cover the top of the mason jar with a cloth or a paper coffee filter and rubber band to keep any insects out. Then you simply let the jar sit in a warm room to ferment. Optimum fermentation temperatures are around 21C to 25C but if you are slightly colder it will take longer, if you are slightly warmer it will take less time. You will need between 10 hours and 24 hours for the whole milk to clabber. This depends again on how warm your room is. You can test if it is ready because when the milk has thickened, tipping the jar slightly, it should move away from the wall of the jar as a single mass. Just as with yogurt making, the milk gets more tart the longer you allow the culture to continue fermenting. To stop fermenting put the mason jar in your refrigerator for at least six hours. Stir before using.

    My mom would make buttermilk this way, I always thought that was a terrible thing to do when I was a child because I loved the taste of milk. My dad would buy it often and drink it up at dinner time. I still thought that was terrible too

    It makes THE BEST cakes, especially chocolate cake. I only buy it now and again, if the bake is planned, otherwise I DIY it with lemon juice or vinegar to full cream milk and boom.

    If a recipe calls for 1tsp vinegar and a cup of buttermilk and i am to use self made buttermilk substitute by adding vinegar, then
    I add 1tbsp of vinegar to 1 cup of milk and in addition to that will add 1tsp of vinegar to the wet ingredients?
    Or simply one cup of milk with 1 tbsp of vinegar is enough?

      Hi Veronica! As a rule of thumb I would stick to what the recipe states as there is often a reason as to why certain ingredients have been chosen for that specific recipe :) baking is a wonderful science! What I would say though is if you try a recipe and it seems a little dry/not very fluffy, then you can add some buttermilk to that recipe the next time you make it :)

    What I use instead of buttermilk is just yogurt thinned out with a little milk or water.

      I always substitute real buttermilk.
      It's very expensive and only sold in large quantities where I live, quart and half gallon sizes.
      I end up throwing most of what's left away because I've never used much in a recipe.

      Yess yoghurt is great too, it's another fav ingredient of mine and is a great substitute for buttermilk since they work in a similar way! :D It is slightly heavier though, so sometimes yoghurt works better for certain recipes and buttermilk with others depending on the recipe :)

    I buy skim milk, heat it up to 40°c, add a spoonful of yogurt starter, and let it ferment for a day or so
