That is smart cooking. Cooking the protein separately keeps it extra crispy then chopping it into small chunks makes it less chewy. Most would just cut the raw chicken up and drop it in the wok with the noodles which would give the entire dish a fishy flavor.
Surprisingly clean utensils and equipments which is pretty hard to find in the Indian sub- continent (though clean and hygienic are not the only parameters to define a good street food, just pointing out that it's rare out here). His knowledge on how to make Eastern Asia inspired noodles is quite fascinating too, without over-seasoning the food. I wish him luck and blessings🙏

Though street food is not so hygienic, the tastes and prices of them are very good and I can have it all day. Street Food is an emotion for many. Once I have had a plate of Chicken Chowmein for 60 Rupees , then the rest of it is history because I'm eating this regularly in the same shop. ♥️
His area is clean, his skills are flawless, maybe yea he should be using gloves, but great food, great video, he's actually making something that in a restaurant would cause about $200US dollars.
I like those fresh fried chicken...I'm in Canada, local Asian or South Asian restaurants never put fresh chicken into noodles,fried rice or chicken paraata. Some times I doubt they add chicken or crow into our food.
