How to Make SALSA TATEMADA | Charred Salsa Roja Recipe (al Molcajete & Blended)

    Whatever you call it, this salsa is DELICIOUS! Salsa tatemada is probably THE most popular way to make salsa in South Texas and Northen Mexico. To make this recipe you just need to take your favorite ingredients and char them on the stove top burner, in a pan, on a griddle or over a fire while you're grilling meat.
    In this video we’re gonna make two different salsa tatemadas - one the old school way in the molcajete for a smaller serving, and the second one in the blender for a bigger batch when you need a crowd pleaser at the carne asada. Both recipes call for charring all your ingredients.
    For the molcajete recipe we’re gonna use one clove of garlic, one roma tomato and one serrano pepper.
    For the blender recipe we’re using four garlic cloves, three roma tomatoes, one red jalapeno, one green jalapeno, one guajillo pepper, one red habanero, one orange habanero and a thick slice of onion. Watch out, this one is HOT!
    Remember - you can add more or less of any ingredient to achieve the heat or consistency that you prefer. Now let’s make some SALSA TATEMADA! Boom!

      @@Gopherborn Those in the video were not too hot as usual, I think they are engineer hybriding them to mellow them out as has happened with jalapenos and serranos.

      Same here, I love the floral taste of the hotter peppers but the heat destroys me usually! About a Serrano heat is what I've found I can handle without incident....lol

    I just made this molcajete salsa, your mother's Spanish rice, and guac for my husband. He's typically very "meh" about my cooking but when he was eating he couldn't stop RAVING! Thank you for your recipes and for helping me impress a harsh critic! Would love to see more vegetable recipes so i can cook from my garden this summer!

    The first time I made the blender version I prepared it exactly as shown, but I didn't like it because the habanero made it unpleasantly bitter, so the second time I made it I omitted the habanero and used Moruga scorpion chili powder, which is a lot hotter so I was able to use less and achieve the same hotness level without any bitterness. This is now my go-to, ass kicking salsa recipe. so tasty and so hot! Thank you Arnie!!!

    I watched this video a couple months ago and went immediately to the store and got everything I needed to make it. I wanted to come back and thank you for this wonderful recipe.     2 tomatoes
    1 tomatillo
    5 garlic cloves
    3 habaneros
    3 Chiles de harbol
    2 Chiles pasilla
    2 dry chipotle
    All tatmados then blended
    With half cup of water
    Half cup of vinegar
    Salt al gusto

    I can’t even begin to say how GOOD this WAS…. because I just killed all 16 oz. I used 5 tomatoes, so it yielded me 16 oz and I just murdered the entire thing! Now I have to make more. Oh, I added cilantro in the blender…. Yum!

    SALSA TATEMADA. I never knew there was a name for this style of salsa. I make this all the time. It’s the only kind I make. I keep it in the fridge all the time. I put all my tomatoes, garlic, Anaheim chilies and onion on a baking sheet and broil them in the oven until black. I then blend all with a stick blender. I deseed the chilies and tomatoes.

    nothing beats the molcajete, it just brings out a flavor you can't experience any other way.
    everything raw:
    -2 jalapenos
    -2 serrano
    -2 orange habanero
    -half a white onion
    -4 cloves of garlic
    -1 oz cilantro
    -2-4 red tomatoes
    -4 tomatillos
    -salt to taste

    Top notch video, I tried the recipe and adjusted it to what I can find here in germany. Sadly the guajillo peppers are only found in very specific stores. But I just added in half another habanero pepper. Absolutely tasty!

    salsa tatemada is one my favorites.. i don’t like to chunky. But still have goo bite size. I roast my tomatoes, garlic, onions, Serrano jalapeños, habanero on a gas grill.. you can make salsa tatamada at parks or at the ranch the ranch cooking on the grill you just have take the Molcajete..

    Finally trying this salsa now, thank you for these wonderful salsa recipes. Habaneros peppers are the perfect balance for me between spicy and flavor. Usually the peppers past habaneros don't taste as good and mostly just seem to be spicy for the sake of spicy instead of spicy for the sake of flavor which is what I see in habaneros :D

    Lovely reciepe! trust me! i tried it and loved it!
    my takeaways, try adding little bit of lime juice to balance out the chilliness
    Add cilantro, add couple of garlic green(green garlic)
    and a very small amount like a couple pinch of sugar!
    trust me you will love it! let me know if you did!

    Absolutely the best way to make salsa. I would leave out the serrano and habanero peppers, too mouth ripping hot!!! Just toasted is just right. Use the best tasting, freshest tomatoes, peppers, onions and garlic you can find.

    This is probably your best one 🥇😍. Plus on the one version, you did habanero 😍 🏆, when I finally make mine I wanna use those, and with a serrano and jalapeno included with it though for flavor and depth in it, and obviously poblano's and/or guajillo's make sense too, to add that for depth of flavor (and color is spectacular). Great job man, thanks for a great basis recipe (point being, I'll probably be following recipe pretty close to yours), love the vid! 🔥🌶️🫑

    Love your salsas Arnie!!! I tried blackening my vegetables in the air fryer in the garage to keep the eye burn out of my house, and it worked well!! Then transferred them to the Molcajete, and it is delicious 😋
