This is so amazing to watch. I’m from India. There are so many similarities between Mexican and Indian cuisines yet so different! Beautiful description of a typical hispanic kitchen. Molcajete style has a different flavor because ingredients are mashed, and not cut. Brings out more flavor and natural sweetness. Very impressive.

I'm actually going to try that way. I'm Romanian and I have in my kitchen what we call a mojar which looks quite similar to the molcajaete and we usually use it for grinding garlic and making sauce because, as you say, it makes a certain flavor come out. It's funny because I have that in my kitchen but I will have to go to a big supermarket to find a jalapeno as we have different types of hot peppers here. haha

I made your salsa recipe and sent it over. That night I got a call from her boyfriend. "um I have a question, are you sure you don't have any Mexican in you?" He couldn't believe anybody who wasn't Mexican could make a salsa that good. High praise indeed.

seeing the similarities with other cultures is amazing! in the Dominican republic they use a similar thing like the molcajete, it's called Pilon, and it's made from wood, in it we mash everything that needs mashing, from garlic to spices, it's used for everything! there is not a Dominican home where you won't find a pilon carefully tucked away in the corner of the kitchen. love your channel.

Excelente. I see people on TH-cam who supposedly are making authentic Mexican. Yours is the real deal. You even used a comal for roasting and a molcajete for grinding. Only in Mexico the saladet or Roma tomato is more common for sauces.

For sure and the beauty of salsa is that the combinations are endless...so many different type of tomatoes and peppers to use you can char boil or even use them raw and just play with different combinations like you can char the tomatoes and peppers and leave the onion and garlic raw and the flavor component changes completely

Next time after you are done making hot sauce drop it in a pan with a little flour then cook keep mixing for a few minutes until you see the colors change a little darker. You will have ranchero sauce, will be the best thing you have ever had. You can add to anything also great with tortilla chips.

I'm Italian and my wife is Irish/Spanish. I grew up eating traditional Neapolitan food. She makes the best lasagna; everyone on my side of the family agrees. You don't need to be the same nationality as the food you're cooking to make it authentic and good.

Hi. I ended up using my cast iron fry pan. And my hand held blender after everything was chard but oiled my pan 1st. Turnout out soo good. Thank you. Will be making this again for sure. Everything I used was from our community garden used green red and yellow peppers along with with everything elsewhere oh and fresh celery raw. ✌🏾

Hola! Made the roasted tomato salsa today and it turned out to be super amazing.. refreshing and flavorful! We do use mortal and pestle in India but I don't have the big one with me, so made it in a blender. In India we love to grill eggplants/aubergines/brinjal, tomatoes, potatoes, and then smash them and spice them up with chopped corriander leaves, green chillies, ginger-garlic, salt and some mustard oil for the extra punch.
