Hi Rick! I live in So Cal (about 2 hrs north of the Mexican border), so citrus season is BIG here, too! I made this yesterday, as described, and it came out great! I may have slightly overcooked it (I am using a friend's oven while I house sit and wasn't as familiar w how her oven heats!), but with the marmalade topping I could hardly tell and it is so tasty. At first I thought the topping might be "too much," but it was easy to make and was way more delicious than a traditional glaze topping. Thanks for the recipe!

Made the cake over the weekend and it tastes great, the only issue I had was that while it was cooling the middle of the cake fell a little. Not sure what would cause that to happen, but I overlooked it as the tase of the cake is phenomenal. Not sweet with a hint of the orange, just lovely. Will try it again with the marmalade glaze as I imagine once the glaze has soaked in it will intensify the orange flavor already present. Thanks for sharing such an easy to impress guests with recipe :)
The cake looks amazing! I have mandarins in my refrigerator right now--I think I will make it this weekend! Also...your nails are amazing!!! That is one of my favorite shades of polish....I have similar shades from half a dozen different brands. haha!!

Or would it be preferable to incorporate it into the marmalade? Or both! I appreciate the effort in recipe development! I tried to make 7 pound cakes a few years ago and never landed on anything solid.
I might do ginger, dried and ground or fresh grated in the batter and either a half habanero or 1/4 tsp cayenne in the marmalade. Unless you like it really hot then put the whole hab in there

Anyway, I use a 4 oz spray bottle from the makeup cosmic isle, washed it real good and fill it with good OV olive oil for cooking and skin care (I know sounds weird, but trust me that my skin is so happy with olive oil mist 😍. I spend less on skin care and get better skin 👌)
A lot of times that flavor is the oil in the can oxidizing (when it’s not the general funkiness of fake butter flavor), you can make homemade pan release with flour oil and shortening which give you a little more control over the freshness of all the components.

Use coconut oil. It's healthier and has better flavor. Use duck eggs if you can. Pam is unnecessary, please use unsalted butter, remove the Nickle before you start to fill your mixing bowl.

I put a small knob of butter in my pan and melt it in my preheating oven. It does the same trick instead of a spray.
