Korean Tea Cookies (Dasik)

  • Korean Lunar New Year (Seollal 설날) is quickly approaching, and it's the perfect time to make some Dasik, or Korean Tea Cookies! These light and delicious little morsels are pressed into beautiful molds, and are one of my favorite traditional Korean foods.
    Here's how to prepare roasted rice flour (use regular, not glutinous sweet rice flour):
    Cook short grain white rice in your rice cooker on the dry side (use just enough water to cover rice when cooking, much less than usual). Then dry your cooked rice and then roast it in your frying pan until lightly yellow. Finally, grind your roasted rice to make the flour.
    Dasik are the perfect dessert to serve honored guests and wish them good health and fortune in the New Year. So, come make some no-bake cookies with me!

    This is fascinating! I started watching because the sweets and the mold that is used remind me of the ones for the Japanese tea sweets, rakugan. But those are made with powdered sugar. The dasik-making process is much more involved!!! Can you make the cooked rice flour mixture in bulk and store it (such as in the freezer) to be used later?

    Hello, I am happy I found your channel, I see the dried five flavor berry you show on video and wonder if you ever tried to plant the berries of the five flavor berry fruit to see if they will grow? I understand that the plant that the five flavor berries grow from is the Schisandra (Schisandra chinensis) vine, the common name Magnolia Vine. I read that plant can grow in usda plant hardiness zones 3-8. I am in zone 8.

      Great question! I actually don't know if they will grow easily here. I haven't heard any Koreans growing it near where I live (SF california) so I'm not sure. But you can try?

    Is it glutinous rice flour or regular rice flour is fine

    Hello! I just bought a dasik mold. Can we wash the dasik mold with water and soap?

      Yes - you can! But make sure you dry it completely right after. Then season with sesame oil (esp. in the first few months). Thank you for your purchase!

    I don’t dasik mould in India, can i used cookies cutter with patterns?
