It could be a little too early. Maybe players haven't fully figured her out yet and don't want to compromise their Top 8 performance with a half-baked Umbrella, or she's just not a great character. I wish we could've seen Pools, because I'm sure there would be atleast one Umbrella there.

Looks like they're getting the hang of her now, and you're right, she looks pretty insane. It was a really fun tournament to watch with all of the Umbrella's, so I suggest you watch it whenever you have time if you haven't already.
She's really new so people haven't quite figured her out yet. She does looks really strong tho. Anti Zoning tools, Set-ups, One of the strongest combo characters in game (like really, when she gets a hit, she HURTS). She's really technical tho because of the hunger mechanic

At 20:00 I'm very confused. Aren't these supposed to be three vs three? Why did Wingzero only have one character? Were they being punished for breaking a rule? Did they choose to lose by being stupid or overconfident?
You can choose to play as 1, 2 or 3 characters. The more characters the weaker they are, but the advantage is that you have more assists to use. Notice how the single Filia can kill a character with just a couple of combos while her health is much bigger.

I just bought this game off steam while on sale… and holy shit this game is complicated for my normie brain. Damn do I like the art style and wackiness though.
The mobile version plays differently from Skullgirls 2nd Encore, one of the differences being that there's no jumping on mobile, if that's what you're asking about.

I’ll always have more respect for players that use a single character. Spamming two assists all game waiting to poke through is such a lame ass, cringe tactic, but that’s what everyone does to compete I guess. I like matches where it’s man to man, not 6 goddam units on the screen blasting away lmao
Maybe to the uninitiated, but the thing is, anyone can burst out of a combo that uses repeated starters at any time with no resource limit. So whenever you see crazy long combos: watch closer. It's actually a long series of resets; the opponent is getting mixed.

As a fighting game enthusiast, that was possibly the most “is it my turn yet” feeling I ever experienced. Doesn’t look that different as a spectator watching these pros, though I’m sure there is hell of skill involved. Outside looking in, I hope they tone it down in future games, but hey, if you guys feel the game is perfect as is, enjoy.
There are virtually no 100% combos in this game. A reset is when you purposefully drop a combo for an opportunity to mix your opponent and start a new combo, thereby avoiding scaling and bursts. Whenever you see a really long combo in this game: watch again. It's actually a series of short combos with fast mixes in between.

It is you control the other characters also you can pick just one character to play instead of a team

those are resets, theyre consecutive combos back to back which you have to escape by guessing the right block direction
