I know I'm saying this a little too late (im new to your channel, amazing work, keep it up!) but I want to still give you this advice. If your plane is in a spin- inside an atmosphere that is- you should absolutely NOT touch the ailerons. Determine the way your plane is spinning to- in this case, (11:00) your spinning to the left, (doesnt matter if its upside down or not) so you should rudder to the right, and keep on ruddering to the right. (basically to the opposite of the way your spinning) Afterwards the only thing left to do is to pray that you can recover from the spin without kissing the ground goodnight.

For the collisions on the taxiways, you can press ctrl+k after spawning a vehicle, you go to local objects and enable collisions for all of them, at least for the KSC objects like taxiways and some extra buildings with the KSC mod you have, for the other statics on kerbin i'm not so sure, you could try spawning there and enabling collisions as well You could make a sandbox save and just do it there and save it, it'll apply to all saves if you save it on kerbal construcs
Thanks for the tips! Luckily it seems to have fixed itself now. Also I actually use a Flightstick for playing (though I’m definitely not that good with it! lol)
if you use the mod FMRS you can warp back to the first stage at seperation after you reach orbit, land it, and then go back to orbit without losing any time because it time travels.
I’m currently developing a very large 2 stage spaceplane system that will be staging low and slow (so it can return to launch site)and FMRS is going to be essential for getting it working! (I just don’t use it with this system because I just barely don’t have to! lol)
Maybe the runway problems are because you seem to be using a mod that changes how the KSC looks, but the collisions may still be the ones from normal KSP so if you don't have a max level runway it will do this.
That’d be awesome, actually the current craft line up in this series is definitely missing a nice “fighter” jet and F-4s are something I have a great deal of experience building in more modded ksp. So look out for it as the series goes on!

you can change the priority of fuel tanks, so that the second stage plane monopropellant is used only after the first stage is empty
