Fried rice best is to used left over rice from a day before.the rice is firmer not soggy.that's how Indonesian make nasi gorreng

A very simple recipe for great, flavourful, moist fried rice.
-One egg per cup of rice. Make sure rice isn't too dry (like a basmati variety, not ideal)
-Minced garlic(important!), onions and any assortment of vegetables you like. Dice into small pieces.
-Soy sauce, sesame oil, oyster sauce, pepper, garlic powder, salt.
-Fry vegetables for a moment, add the sauces and flavourings, then fry rice for a while to dry it slightly.
-Add egg and stir vigorously to break into many small pieces giving the rice a golden sheen.
-Allow the rice to burn(slightly!) to add even more flavour.
I cook this during late nights, during weekends, as a lunch. So simple yet so filling. You can even add an egg or a chicken chop, add spices, make curry fried rice, or add seafood!
i'll try your recipe, ive been trying fried rice recipe, but it just never meets my own expectation. Been using sesame oil, with butter , salt and pepper. just feels like its missing something. I use onions and long beans as well. but not the garlic. Will give it a try

1 cup rice, 2 eggs, 3tbs soy sauce, salt pepper to taste, meat of choice. Add meat to a pan and cook it, add rice, separate rice to make a while in middle add eggs, let eggs cook, stir everything together, add soy sauce and vegetables, add salt and pepper. Done

Taiwanese fried rice maybe.
Fried rice is kinda basic recipe actually, only rice, eggs (usually i do 6 to 8 eggs with 6 bowls of rice, medium sized one which you can hold on your hand), shreaded onion leaves, minced garlic, together with whatever side dishes you like to eat with, mine would be minced sausages, shrimps, long beans, sometimes diced meat would do too.
First gotta prepare all the side dishes first, cook them if needed, dice to bite sizes, usually i'd boil the vegetables (beans or carrot) till it mildly crispy but not too soft, then I'd fry up marinated meat (of your choice), then dice them.
Rice is cooked before hand, get a big frying pan which can hold everything you have prepared, put some oil or fat in, spread it across, flame medium, wait till it steaming, put the garlic in, might do some onion too if wanted, stir them around till golden, put the rice in, medium high heat and mix them good. When there's no more oil at the bottom, form a volcano like shape and put a spoonful of oil in between ( the size of the spoon in the clip) then start put in eggs, break the yolk, put some salt in (or soy sauce) and then mix the whole thing up until all the rice are golden, if there's still white rices inside, just pop in some more eggs. After that mix in all the meat, then put down the heat to low, mix in the vegetables, and then the onion leaves for about 10 to 15s then take the whole pan off the hot stove.
Serve the rice with paprika or pepper powder
Rin Zler if you don’t have a pan / wok that can retain heat well, then it’s best to do small batches. Go day-old cooked rice (1cup) and one egg. Hot-hot pan, add egg then as the egg bubbles, toss in the rice and stir. Depending on your heat and pan, you might need to let it sit.
If you have high heat, stir / agitate constantly. But be careful not to break the rice.

@@levi___2096 Yes, I've put leftover chicken in my rice and it was delicious. We didn't have a lot of money growing up so we would get creative with leftovers and ingredients we had. Eating this reminds me of my childhood with my family having a good time together.
