  • Here is my recipe for Alchermes sweet peaches: a delicious two-flavor custard between two soft biscuit domes, with sugar and a colored aromatic liqueur.

    🍳 PREPARATION 🍳
    00:00 - Preparing faux peaches: Beat butter and sugar until frothy. Add the eggs, vanilla and salt, then the sifted flour and baking powder. Mix until you get a smooth compound.
    00:57 - Form 25g balls out of the dough and place them on the baking sheet lined with parchment paper, leaving enough space between them. Cook the balls in the static oven at 175°C for 15 minutes.
    01:30 - After cooking, let the balls cool slightly. With the help of a teaspoon, empty the central part of the hemisphere when it is still warm and soft, creating a hollow in which to insert the custard later.
    01:57 - To make the creams, finely chop the dark chocolate and set it aside. In a saucepan, heat the milk together with the internal seeds of the vanilla and its pod, also adding the lemon zest, until it is almost boiling. In a bowl, mix the egg yolks with the sugar, corn starch and rice starch. When the milk has reached the right temperature, remove the vanilla pod and pour the mixture of egg yolks, sugar and starches into the saucepan, stirring with a whisk until the cream thickens.
    02:43 - In a bowl, weigh 400g of custard and add the finely chopped dark chocolate. Stir vigorously until the chocolate is completely melted and the cream is smooth and homogeneous.
    03:09 - To assemble the mock peaches, transfer the custards into two separate piping bags. Fill half of the hemispheres with the vanilla custard and the other half with the chocolate one. Next, join two different hemispheres to form a kiss.
    03:38 - Prepare two separate bowls: one with Alchermes and the other with granulated sugar. Quickly dip each peach in the liqueur, drain it well and pass it in the granulated sugar until it is completely covered. Place each peach on a paper cup and garnish it with one or two leaves of mint or sugar paste. Let the peaches rest in the refrigerator for at least an hour before serving.

    flour 00 375 g
    100 g butter (at room temperature)
    3 medium eggs (at room temperature)
    granulated sugar 125 g
    vanilla 1 pod
    baking powder for cakes 8 g
    salt 1 pinch
    For the creams
    fresh whole milk 420 g
    4 egg yolks ( 80 g)
    sugar 130 g
    corn starch 25 g
    rice starch 30 g
    dark chocolate 100 g
    butter 15 g
    vanilla 1 pod
    untreated lemon the grated peel of 1
    For the bath
    Alkermes 300 g
    To decorate
    mint leaves to taste
    granulated sugar 300 g

    Grazie interessante ho realizzato la ricetta un cambiamento che ho fatto ho fatto riposare l impasto per 30inuti nel frigo. Sei brava a spiegare.

    Carissima Sonia noi le facciamo anche con la nutella mettendo un pochetto di liquore anche dentro la pesca sono favolose grazie per aver trasmesso una ricetta tradizionale della mia regione 🤗🤗

    Grande sonia la ricetta di mia madre era proprio simile a questa da abruzzese..per le feste ne faceva in quantità industriali queste e le deliziose ...grazie x il procedimento perché ho la ricetta di mamma ma non sapevo dove iniziare ❤❤❤

    Ciao Sonia davvero deliziose queste pesche,vorrei sapere a quanto gradi e x quanto tempo posso informare questo dolci nel forno ventilato,ho solo questa modalità,il mio forno ha 30 anni, grazie,sei bravissima.😊😊😊

      Ciao, nel ventilato dovrai diminuire di 20 gradi rispetto allo statico :)

    Si ..la differenza e' nell'impatto.. nelle tue si mette il.lievito per dolci senza lievitazione..nelle mie il.lievito di birra con lievitazione..un bellissimo impasto tipo bioches e poi tutto il resto
    ...una vera delizia...di possono fare pesconi o peschine a seconda di come si preferiscono....provale!!! Ciao

    I 100 g di burro si possono sostituire con olio di semi o margarina vegetale?grazie x la risposta.
