One of the best beer can chickens I smoked was one I let sit overnight in a wet jerk marinade. Added some of that to the beer can and boiled the rest to serve with the bird at the end. Rotated the setup every so often for even crisping. Ridiculously good.
I have found herbs in my can, and a couple small potatoes wedges near the neck to trap juicy moisture, to be great! Almost forgot - let the beer can get closer to room temperature. Also letting my seasoning sit on that chicken for about 20-min before I put it in the smoker. So many different ways we can all do it. That’s what I love about BBQ/SMOKIN. Keep it up 👍🏼
Always cooked these at 325-350 and closed up the neck cavity with toothpicks also rub chicken with mustard then rub pour a few ounces of beer out and reserve or drink and add some rub to beer I like the potato idea to plug the neck as this steams the meat from the inside out 😊

I would love to try the Smokin' Pecan pellets but they are more than double the price of other pellets I buy which is kinda ok. However I then have add on the shipping up to Alberta Canada and they become completely unreasonable to buy. I hope Smokin' Pecan can find a Canadian distributor.
I watched twice but did not see or hear you say you plugged the neck opening. In my opinion, plugging the neck and a dark beer like Guinness and hot sauce makes all the difference with Beercan Chicken. Anyway, it looked like a delicious cook. I do enjoy your videos. Try taking a small potato and use it to seal the chicken neck. Keeps the beer steam in the cavity. Very tasty.

Not just beer can chicken but whole chickens in general! You can pick a chicken up for $5 and they are a game changer on the smoker. Great video!
