Love cooking risotto this way. Another good option is to brown spicy Italian sausage along with the onions. Slice the sausage links after they’re browned. Add mushrooms per your recipe and cook a bit. Then deglaze with red wine. And proceed like your recipe. A great main dish.

Marie, thank you for the quick start instructions for the instapot. You saved me alot of reading :). I'm going to enjoy using it! I left the starch on the risotto and had the creamy texture you described. The dish came together super fast and was wonderful. The recipe is so versatile! I made your spaghetti sauce recipe this past week when I was entertaining. Again, thank you!
Thanks for your yummy recipes. I've avoided buying an Instant Pot since I have had a simple Presto Pressure cooker for over 40 years now. I find some of my appliances have more than one use, but sometimes it is not worth getting them out and I'm out of counter space. I wouldn't bother with a pressure cooker for the rice since it takes longer than the 6 minutes because you have that 10 -15 minutes to build up the pressure with your Instant Pot. Stove top would take less time and I can sautee the onion and mushrooms first in the same pot in either a regular pot or pressure cooker. No vape-warping of anything close because it is on the stove. Not trying to criticize cooking methods here, but just suggesting an alternate way since we all have our preferences. Yes, your gluten free ready made broth is healthier, but Instead of that large container of broth (that costs far too much in our little store, that one-use pack of 4 cups costs much more than my whole powdered container). I like the small containers of the (over 1 cup powder) of Knorr (OXO) Beef in a mug (or Chicken in a mug) bouillon base powder. Always handy in the cupboard and versatile for soups, gravies, stir fry, adding to cook rice instead of just using water, etc. 1 cup boiling water to 1 tsp. powder lasts a long time. I find a quick cup of this in a mug makes a great low calorie drink too. Bad part about this product is that it has salt and monosodium glutamate and other icky things so I use it in moderation, but even diluted a bit more with water still gives enough flavor.
