I think the recipe meant cacao nuts aka chocolate, like a few others have mentioned. I think this may have been a recipe for a shelf stable Mexican chocolate bar. I was googling and saw that the 1st Earl of Sandwich was the ambassador to Spain. He would have encountered chocolate there. Also the Badianus Codex, 1552, was an Aztec book of herbal remedies, some involving chocolate (per wikipedia), that had been brought back to Spain. This book is now in the Wellcome Collection in London. Might be worth contacting them to see if your recipe is in there and that's where this came from. That would be an amazing historical connection and would make an interesting video.
I agree.... it seems like coconut would not be terribly common, not cacao nibs would be, but if I understand the processes, cocao nibs would have been storable where a coconut maybe not so much?

Even when she is not speaking, the high-voltage energy from Julie that is dynamite. Quite comedic, actually. You compliment each other very well in that "opposites attract" way.
I found it rude and annoying, until I concluded that maybe it’s just for the cameras. She acts as though she always knows better than him, when it’s not the case at all. And I’m American- lack of manners is one of my pet peeves. Sometimes you can’t even hear Luke because of Julie’s interruptions, and that IS annoying, even if it is only done for the cameras.
I'm an English man living in Portugal many years l love my English heritage love your vidios , they always give me a lot of joy to watch. I used to visit many beautiful stately homes when still living in England keep up the good work.
Every Australian knows what hundreds & thousands are as well. We sprinkle them over fresh bread & lots of butter. They are tiny balls of sugar I guess coloured in different shades & used on cake for children's party's or sprinkled over icecream. They are part of our heritage!!

I think it would be great to find a Chef that has expertise in old English recipes (like Lucy Worsley's shows), and have them recreate this and some other recipes. It would be a really great segment to select some recipes from the book, prepare, and feature them!

Reading a recipe from a journal from the 1660’s gave me chills. The history is just phenomenal! Think the cacao pods are unprocessed chocolate not coconut. So he created a trail mix bar. Some things never change. Love how Luke pushes her buttons in such a sweet, loving way. He’s a dear. Marriage banter. She’s a dynamo. Guinea pepper is in the ginger family but looks like whole black pepper. New to me.

What you call “wellies” are called “barn boots” or “chore boots” in rural central Michigan. If you have livestock, you need them in the barn! They’re also handy for slogging through the mud in early spring here.
Here in Midcoast Maine there worn on the boats when we go lobstering or fishing. We call them “haul boots” because lobstermen call the act of lobstering “hauling” or “going to haul” which I’m sure comes from the olden days when all the ropes from the traps were hauled by hand. These days they’re hauled by a hydraulic “hauler” which incidentally was invented by nephews grandfather 😊
Yes - in the UK it's 'wellies' short for Wellington Boots, after the Duke of wellington of course. The Le Chameau ones are very luxurious tho as they have a warm lining (also VERY expensive!) - ordinary wellies may keep your feet dry but they are freezing for your feet unless you wear very good socks/fleece liners.

So I dont know about this recipe but it is very very common in older cooking to heat and lightly stir your spices until they are roasted/fragrant/toasted. There are several words for it. I've seen an old cook book that said brings delight.
I think it was cacao nut not coconut (you can get them from cacao pods) Remember cacao was used medicinally in the mid 1500’s & I think that would have been the way to go. You’d essentially have been making a flavored chocolate.

Luke & Julie are cute. Talking over each other makes it even cuter. I don't know if it is a Chicago dialect but if not, I have noticed Julie says words like "all, always, also, etc." like me. And I am from South Africa and we get our English from the British. Again though, not sure if it is a Chicago thing but if not, it is totally understandable that one would subconsciously start talking slightly with the accent of the country you have spent half of your life in or to start saying words like one's partner. Luke is right about the guinea spice being from West Africa too.
Luke ~ your 'chip-shifter' for the biomass is, in design & principle, an Archimedes Screw, which was first used by the ancient Egyptians to draw water from the Nile irrigation channels to water their fields of crops. It is so named, as Archimedes was the first to describe it in 234 BC (though, in fact, the Egyptians first engineered/invented it). The journals of the 1st Earl of Sandwich look to be a wonderful treasure trove ~ absolutely love that cold-cure energy bar!
'Talking -Over' Style: Yup, it's a thing. Most people call this interrupting & consider it rude. But the person doing it isn't at all rude by design. In fact the 'over-talker' is keenly paying attention to the other person speaking. This, to the over-talker, is actually a verbal dance. Consider dancing normally. Two people moving, with one called the 'lead' - both move together. What Julie's doing is perfectly fine with me, as she doesn't throw lots of sentences in, it's mainly short bits, phrases etc. I consider this like spices in a recipe, or accessories to an outfit...etc etc. I think those who really can't stand the tiniest of added bits (interruptions) are actually those who can easily lose their train of thot, so they don't like it. Put two of us 'over-talkers' together... and we have great chemistry and fun. For us, these types of conversations energize us. But alas, an astute person will learn just who in their social circles are irritated by this & who actually likes it. That takes time to learn, but it can be achieved. 'Don't speak until spoken to' is condescending & elitist. Julie is not a child.. And you aren't her boss. You two are charming together. I figure you knew she did this while dating. If it has bothered you too much then, you would've parted ways. Meaning... Don't let what others in the comments say to chg what works for you two - and that even includes what I've said. You 2... just do you. 🖖

Hey Julie and Luke, when I was a kid in my native Chicago, my mom would bring us chocolate from Mexico. In those days there were very few Mexican products. It’s not like a chocolate candy bar, but to make hot chocolate milk, or hot cocoa as you all say in England. The brand is called Moctezuma, after one of the Aztec leaders. It’s packed in discs. She, or my father, would take a disc and add some milk. They had a special enameled saucepan they used just to make the hot chocolate. You have to be careful to be stirring the milk and make sure the chocolate is incorporating. There’s a molinillo, a wooden mixer which you swirl within your hands to make the milk froth. My father used a hand beaterThis is so superior to the powered cocoa, although I must say that one of the leading brands of Mexican chocolate, Abuelita, has begun to sell a powdered chocolate. All this to say, you guys should try and get some of this real chocolate. You can use a milk frothier instead and you’ll get a great result.
I love when you bring history to life and prepare recipes. I did enjoy hearing Luke speak, he is very interesting. No, it is not strictly an American female trait to interrupt. As someone mentioned Julie is "high voltage" and full of ideas. That is a great gift to Mapperton and us. She reminds me of Jo in Little Women! The King Charles II bars sound delicious and healthy with the wonderful spices. I hope you find a way to produce these. May be tricky to ship them to other countries, customs, etc.

Luke & Julie are cute. Talking over each other makes it even cuter. I don't know if it is a Chicago dialect but if not, I have noticed Julie says words like "all, always, also, etc." like me. And I am from South Africa and we get our English from the British. Again though, not sure if it is a Chicago thing but if not, it is totally understandable that one would subconsciously start talking slightly with the accent of the country you have spent half of your life in or to start saying words like one's partner. Luke is right about the guinea spice being from West Africa too.

Luke ~ your 'chip-shifter' for the biomass is, in design & principle, an Archimedes Screw, which was first used by the ancient Egyptians to draw water from the Nile irrigation channels to water their fields of crops. It is so named, as Archimedes was the first to describe it in 234 BC (though, in fact, the Egyptians first engineered/invented it). The journals of the 1st Earl of Sandwich look to be a wonderful treasure trove ~ absolutely love that cold-cure energy bar!

'Talking -Over' Style:
Yup, it's a thing. Most people call this interrupting & consider it rude. But the person doing it isn't at all rude by design.
In fact the 'over-talker' is keenly paying attention to the other person speaking.
This, to the over-talker, is actually a verbal dance.
Consider dancing normally. Two people moving, with one called the 'lead' - both move together.
What Julie's doing is perfectly fine with me, as she doesn't throw lots of sentences in, it's mainly short bits, phrases etc.
I consider this like spices in a recipe, or accessories to an outfit...etc etc.
I think those who really can't stand the tiniest of added bits (interruptions) are actually those who can easily lose their train of thot, so they don't like it.
Put two of us 'over-talkers' together... and we have great chemistry and fun. For us, these types of conversations energize us.
But alas, an astute person will learn just who in their social circles are irritated by this & who actually likes it. That takes time to learn, but it can be achieved.
'Don't speak until spoken to' is condescending & elitist. Julie is not a child.. And you aren't her boss.
You two are charming together. I figure you knew she did this while dating. If it has bothered you too much then, you would've parted ways.
Meaning... Don't let what others in the comments say to chg what works for you two - and that even includes what I've said.

Hey Julie and Luke, when I was a kid in my native Chicago, my mom would bring us chocolate from Mexico. In those days there were very few Mexican products. It’s not like a chocolate candy bar, but to make hot chocolate milk, or hot cocoa as you all say in England. The brand is called Moctezuma, after one of the Aztec leaders. It’s packed in discs. She, or my father, would take a disc and add some milk. They had a special enameled saucepan they used just to make the hot chocolate. You have to be careful to be stirring the milk and make sure the chocolate is incorporating. There’s a molinillo, a wooden mixer which you swirl within your hands to make the milk froth. My father used a hand beaterThis is so superior to the powered cocoa, although I must say that one of the leading brands of Mexican chocolate, Abuelita, has begun to sell a powdered chocolate. All this to say, you guys should try and get some of this real chocolate. You can use a milk frothier instead and you’ll get a great result.
I love when you bring history to life and prepare recipes. I did enjoy hearing Luke speak, he is very interesting. No, it is not strictly an American female trait to interrupt. As someone mentioned Julie is "high voltage" and full of ideas. That is a great gift to Mapperton and us. She reminds me of Jo in Little Women! The King Charles II bars sound delicious and healthy with the wonderful spices. I hope you find a way to produce these. May be tricky to ship them to other countries, customs, etc.
